Promotion

Good news! I got a promotion at work today. I am now officially Marketing Specialist. I don’t generally talk about work on this blog as a rule or even reveal where I work so I’ll leave it at that. No worries, you will still be seeing many snacking in the cubicle shots.

On that note, breakfast in the cube (as it is every morning) was cereal and milk I packed from home. I don’t do this often because I have to carry an extra container with milk (why don’t I have milk for the office.. Yeah, I don’t know. Too much work).


-last of my grape nuts, little less then a cup
-handful of blueberry muesli
-half a banana
-skim milk (I don’t measure, just like to drown my cereal in it)

I need more grapenuts. I love them. So filling an versatile. A great addition for cereal mixes.

Morning snack was the other half of the morning banana and some mixed nuts. This time I added cocoa almonds to the mix.


For lunch our department decided to go out and we went to a local place called Wild Rice. The menu was full of all kinds Asian dishes like rice bowls, dim sum, pho, and sushi. There was a lot to choose from!

I went with the Chirashi which was basically a bunch of sashimi with a little side of rice.


It also came with miso soup and a salad.


I ate almost everything and it was delicious. Also very good portion sizes. I say almost because the Ginger salad was covered in Ginger dressing so I skipped a lot of that. The rest was great.

Afternoon snack was an appale.  I also had a few cocoa almonds on the side for filling fat.


Vita top in my uggs that I wore into work this morning (I later changed into heels, no worries) Yes, it is still freezing here. In april.


Fitness: normal wed routine refer to the my workouts tab.

Dinner was a la Jae tonight. He is moving soon which makes me sad to think about :( and will probably make the blog less interesting haha. He made homemade mashed potatoes, shake and bake pork, rolls, and stir fry veggies.


-the mashed potatoes were made with a little margarine and low fat milk


-the pork was first coated with stone ground mustard and then dipped in shake and bake and baked (soooo good!)


-he had 2 veggie choices (sampled both of those)


-had half a roll. Mmmmm so flakey.


Fruit-filled day

For some reason my legs are super sore after my rub yesterday. I kept waking up in the middle of the night thinking how sore I am. Weird. I don’t think I stretched enough or something. I always stretch well in my classes so will make sure to spend some extra time on that tonight.

My breakfast was chosen for 2 reasons. I have a ton of fruit as I mentioned yesterday and my legs needed some protein to recover.


-2 scrambles eggs from the cafe downstairs
-pear
-orange
-gold peak diet iced tea (bought downstairs on a whim)


This was just what I needed. I am really enjoying the array of fruit I have this week. I need to remember that in the future instead of just buying a bad of one type for the week.


Morning snack was more fruit, a banana still nursing my tea from breakfast.


And a few cocoa roast almonds.


Lunch was Campbell’s savory chicken and long grain rice soup. I added lots of hot sauce.


And had the last of my butter snaps on the side.


My afternoon snack was the same as yesterday and stuck with the fruit theme: strawberries and pineapple. Mmm.

Fitness: Did 100 pushup challenge w4 d1 during a work break and completed it for the first time!! Indie 121 pushups total (with breaks). Moving on up! After work I taught my kickboxing class. My legs were still pretty tired and with the thought of 7 more miles left to do this week I didn’t push myself quite as hard as usual. Not sure my legs would have had it anyway. Hopefully they get it together for tomorrow.

Dinner was leftovers from Monday with a twist.


-seared tuna (reheated with jalapeño mustard)
-a few stalks asparagus
-olives
-spinach
-couple tbsp part skim mozz
-little more then a tbsp ff thousand island dressing
-small side of rf kettle chips chips for crunch and a little extra fat (not the good kind but still filling)


This was awesome! The jalapeño mustard was really what that tuna needed. I was skeptical about this salad because I didn’t have much on hand to throw into it but I guess sometimes simple works.


I decided the other day I need to add a little more fat (the healthy kind mostly) into my diet during the week. It definitely keeps me from getting hungry. Yesterday was a good example. I ate really low fat all day and was star ing at 6:30 and wanted to binge. Anyway I’ll try and add some fat here and there with part skim cheese instead of nonfat, olives or avocados or things with omega 3s, nuts, etc. I guess we’ll see if can stick with it without adding too many calories.

I had planned to have a cadbury cream egg for dessert but I actually wasn’t hungry for it. My serving of chips felt like my splurge for the night and I was satisfied.

I am currently watching the new (last week) episode of Sister Wives. I have a strange obsession with this show. Its just so strange to me I have to watch. Anyway back to Cody and fam.


Diet-to-go abandoned

I found another reason this morning that diet-to-go is not for me. I like to eat what I feel like eating. I froze 2 of the meals for when I feel like eating them later. And went back to pb for breakfast.


-last 2 slices carb style bread
-tbsp RF pb
-tbsp fluff
-tbsp sf jelly

I missed you.

For my morning snack I stole these clementines from my roommate. Thanks, Lauren! I had 3 since they are small.


Lunch I went back to diet-to-go because that’s what I had on hand at work. This was supposed to be Thursday’s but I thought it was a little too many calories for yesterday. Friday I generally eat a little more so I had the 470 calorie lunch which got downsized and then had some additions.

Hummus, Pocket bread, carrot and cranberry salad (added terra chips)


The hummus and pocket bread were good but overly bready and small. I didn’t finish the hummus it was a huge serving for the small bread.


I did not like the cranberry salad. Can’t really explain it, not for me.


I added the terra chips from the lunch the other day to beef up my meal.


Overall not impressed with this meal. Leftovers:


My afternoon snack was a box of Raisels I had in my work stash.

Fitness: it was on my schedule to run 2 miles today but I had said I would sub the 5:45 kick boxing class at the gym tonight. I managed to get there, run 2 miles on the treadmill in 26:33 minutes (!) and get to the kickboxing class on time! I did the run fartlek style so the quick pace i was trying to bang out would seem less daunting it worked Amazingly I wasn’t super exhausted afterward.

Lauren came to my class and we decided to order dinner afterward. I was craving the tuna sashimi I has the other day from Shan Chuan. Tekka Don and this time I knew to add green.

-brown rice
-mixed steam veggies
-dipping sauce (may have been general Tso)
-beer


This was epic as Charlie Sheen would say. Winning!

After I picked up Dan we stopped for dessert. Hot fudge sundae. They forgot the juts so I added chopped pecans I happened to have at home. Mmmmm.


Diet-to-go Full Day 2

I decided that it has been much easier to get up lately because the sun is now up before my alarm goes off. Makes it so much easier. I can’t wait for daylight savings time when it stays light later too.

Today instead of just blindly following the diet-to-go meals I checked out the nutritionals. I noticed that Thursday meal total was 1290 while Friday was only 910. As I usually eat a little more on Fridays I am switching up some meals to even this out.

I started with the assigned Thursday breakfast: Scrambled Eggs Rancheros


This came with scrambled eggs topped with a salsa-like sauce, a whole wheat tortilla, and a sausage. The total calories were 280.


I really liked the tortilla and eggs. This is definitely something I would make myself. I am actually intrigued that reheated scrambled eggs were not terrible. I am guessing they had to undercook them before they packaged, but maybe this is something I should do if I want eggs a few days in a row.


The sausage was a nice addition as well and I am guessing it must have been a lean one because of the low calorie count of the meal.


This breakfast was much better for me and probably much more filling then yesterdays with a lower calorie count.

Because I plan to make some substitions to today’s meal plan I planned to enjoy all my usual snack times. However I was in a meeting this morning and missed the 11 am one.

Lunch is where I switched out Thursday’s meal for Friday’s that had less calories.

New Mediterranean Pasta Salad with Tuna


This was a pasta salad in a little bit of mayo I think. Not really sure. It had tuna, a cucumber (wish there were more), carrot shreds, some feta cheese (needed more of that too), and black olives (loved).


It was tasty but I think I could make a better version. It was not whole wheat pasta and needed more of the aforementioned mix ins. I may make my own version in the future, good idea but not well executed.


Afternoon snack was a pre-portioned (by Coworker Leslie… thanks!) bag of cinnamon burst cheerios. These were delicious! Apparently they have a bunch of added fiber, which is my qualm with regular cheerios. Man up that fiber and/or protein!


preworkout I had a samoas cookie fiber plus antioxidants bar- caramel coconut fudge. And if you don’t believe me about my constant rant that these taste like the girl scout cookie, this was featured in Hungry Girl Newsletter for the same reason yesterday!


Fitness: Today I left work a little early to get in my training run (3 miles) and make my hot yoga “appointment” (I bought 5 hot yoga classes for $25 via a living social deal a while back and have 3 more to use and I am determined to use them all before they expire March 27). First off, unfortunately for a LARGE chunk of my run my garmin wouldn’t connect to the satellites. It was very frustrating and I am really not sure how far I went. I took a different route for the run then I did on Monday to mix it up, so that didn’t help either. I was out running for about 35 mins and I feel like I was keeping a pretty fast pace for most of it. I had to make it at least 3.5 miles. No way to tell because the garmin data is messed up. Yoga was kind of lame today they expanded the studio which was good to fit more people. However, I was still really close to the people on other side of me and I was near a drafty opening so it never got hot for me. I barely broke a sweat. Not that sweating means anything toward your workout but I like it. :(

Dinner was going to be back to the regular diet-to-go scheduled meal but my roommate Lauren and I had a hot yoga date so we continued it on to dinner. The diet-to-go stuff can be frozen if need be so no big deal. I tried out Pot Belly for the first time.


Ever since I realized they had skinny subs and published nutritional data I’ve wanted to try it out. I ordered the skinny mushroom melt (mushrooms, Swiss, provolone, and American on slimmed down bread) with hot peppers, onions, and Italian seasoning.


The sandwich was tasty but very small. The hot peppers definitely made it better, they were really spicy.

I had a side of baked lays.


The total for this meal was around 450 calories. Not too bad for a meal out but I was not very full. The price tag was right $5.79. Really not bad.

I had a go diva white chocolate heart when I got home. It had hazelnut filling. Mmmmm.


All microwave dinner

Oats for breakfast seemed cozy on this cold winter morning.


-1/8 c steel cut
-1/2 c rolled oats
-tsp pecans
-salt, sweet n low
-half banana
-handful frozen mixed berries for TJ’s (mostly blackberries tho)
-water


The blackberries in this were awesome. Delicious sour kick to the oats. I have 2 whole bags of this frozen mixed fruit so pretty excited about that haha. Get ready to be sick of reading about frozen berries.

Morning snack-a-roo: other half of the banana.


Lunch was healthy choice tortilla soup with sun chips and of course Goya. Hot sauce is another thing that if don’t mention you can probably just assume it’s there, especially Goya with my lunches.


Anyway, This soup does not have enough chicken. The tortilla strips are good but it is not very hearty.


Afternoon snack of soy nuts and cocoa roasted almonds. I also had a coffee (no pic) which quickly perked up my tired afternoon.


Ever notice sometimes what a little bit of caffeine can do to your mood? That’s why I try not to drink it everyday. I like the energy and mood boost I get with the low tolerance.

Fitness: I tested myself in my pushups today. Instead of doing a routine I I’d as many as I could and then did and easier day. What I ended up with was 44-14-10-10-24. I can’t believe I’m only at 44 after so many MONTHS of doing this! I still plan to stick with it though… I will get to 100 one day! Aside from cursing the 100 pushup challenge, my other fitness was my regular Tuesday routine (see the my workouts tab).

Dinner was back to my roots aka totally prepared in the microwave– thanks to a few Trader Joe’s items.


Tuna in red panang curry sauce and Thai style lime pilaf.


Took a total of about 6 mins to put together and made 2 meals at about 420 calories each.


1. I started by heating the rice 2 mins in it’s pouch. Not sure why I bought this rice because its not whole grain, must have thought it was.
2. Mixed the TJ’s tuna pouch with a 100 calorie can of tuna (it didn’t look like enough meat and there was extra sauce so this was a good choice especially to be able to stretch it into 2 meals) and heated in microwave 2 mins.
3. Toss green beans in salt, red pepper flakes and garlic powder then heat in microwave 2 mins.

The rice was good but nothing special. If it were whole grain I’d buy it again but it wasn’t worth the lack of fiber.


The tuna was really good! It was in no way “hot” as described on the package (note the Goya addition. Would have been better with siricha (sp?)) As I said before I was glad I added more tuna to it!


Always enjoy French cut green beans.


All in all a good meal. I will enjoy it again… Probably tomorrow.

2 fish for dessert.


Btw When I eat this small serving of fish, I don’t really consider it dessert. Its basically just a palate cleanser after dinner. I’m not a psycho, I know what dessert is and I would not consider 2 fish it. But anyway its nice tonhave a touch of something sweet after dinner haha.

New year

Well I pretty much drank through the past few days. My body hates me. There was lots of beer, champagne, mimosas, car bombs, Irish coffee, and margaritas in there. Not the healthiest weekend but it was fun… Until I got hungover in the middle of the night on Saturday. Not so fun.

Anyway here are the eats.

Dan and I cooked a seafood feast new years eve.


-lobster tail on sale at acme with butter spray
-tuna steaks in mesquite lime marinade (only 10 calories a tbsp)
-green beans with spray butter
-salad mix with tomato and ff thousand island
-baked sweet potato fries disks

Lienenkugel a fav beer.


I made a red velvet cake with cake mix and diet soda and rotel dip to take to the party.


-2 cans rotel
-jalapeños
-2 boxes velveetta light
-1 box ff cream cheese
-hot sauce

I was stuffed at the party but made room for many chocolate liquor shot and pizza dip.
