Fruit-filled day

For some reason my legs are super sore after my rub yesterday. I kept waking up in the middle of the night thinking how sore I am. Weird. I don’t think I stretched enough or something. I always stretch well in my classes so will make sure to spend some extra time on that tonight.

My breakfast was chosen for 2 reasons. I have a ton of fruit as I mentioned yesterday and my legs needed some protein to recover.


-2 scrambles eggs from the cafe downstairs
-pear
-orange
-gold peak diet iced tea (bought downstairs on a whim)


This was just what I needed. I am really enjoying the array of fruit I have this week. I need to remember that in the future instead of just buying a bad of one type for the week.


Morning snack was more fruit, a banana still nursing my tea from breakfast.


And a few cocoa roast almonds.


Lunch was Campbell’s savory chicken and long grain rice soup. I added lots of hot sauce.


And had the last of my butter snaps on the side.


My afternoon snack was the same as yesterday and stuck with the fruit theme: strawberries and pineapple. Mmm.

Fitness: Did 100 pushup challenge w4 d1 during a work break and completed it for the first time!! Indie 121 pushups total (with breaks). Moving on up! After work I taught my kickboxing class. My legs were still pretty tired and with the thought of 7 more miles left to do this week I didn’t push myself quite as hard as usual. Not sure my legs would have had it anyway. Hopefully they get it together for tomorrow.

Dinner was leftovers from Monday with a twist.


-seared tuna (reheated with jalapeño mustard)
-a few stalks asparagus
-olives
-spinach
-couple tbsp part skim mozz
-little more then a tbsp ff thousand island dressing
-small side of rf kettle chips chips for crunch and a little extra fat (not the good kind but still filling)


This was awesome! The jalapeño mustard was really what that tuna needed. I was skeptical about this salad because I didn’t have much on hand to throw into it but I guess sometimes simple works.


I decided the other day I need to add a little more fat (the healthy kind mostly) into my diet during the week. It definitely keeps me from getting hungry. Yesterday was a good example. I ate really low fat all day and was star ing at 6:30 and wanted to binge. Anyway I’ll try and add some fat here and there with part skim cheese instead of nonfat, olives or avocados or things with omega 3s, nuts, etc. I guess we’ll see if can stick with it without adding too many calories.

I had planned to have a cadbury cream egg for dessert but I actually wasn’t hungry for it. My serving of chips felt like my splurge for the night and I was satisfied.

I am currently watching the new (last week) episode of Sister Wives. I have a strange obsession with this show. Its just so strange to me I have to watch. Anyway back to Cody and fam.


Burn burn burn it up

After my weekend binge (sooo many cookies, 2 fast food stops, wedding hor devours, etc), I knew I had to get back on track this week. I felt like eggs so on my way into work I stopped at McDonalds (yeah, yeah fast food again but it was with good intentions) and got some scrambled eggs. That’s it, 170 calories of eggs. When I got to the office I opened them up and they had thrown a biscuit in there as well. It smelled so good. I looked up the nutritionals for it and opted out. I took the biscuit and immediately tossed it so I wouldn’t be tempted.

I toasted an Arnold multi grain sandwich thin and made a sandwich with the egg and Goya hot sauce. Delicious. I really need to just bring egg beaters and some Pam to work and make my own eggs in the microwave. Da well, this is delicious in the mean time.

I was freezing in my cube and drank the last of a berry tea bag I had during my normal morning snack time.

I ran an errand at lunch and picked up my gift for tomorrow’s Santa’s Sloppy Seconds we’re having at Lunch Club. Excited to see what everyone gets (it’s like white elephant I guess). While out I was able to pick up lots of seasonal teas! Peppermint, pumpkin spice, and more eggnoggn’. I returned to have a chicken noodle soup lunch.

With a side of ranch rice quakes. First time I’ve had the ranch. These were delicious, not too over powering…just right.

Afternoon snack I broke into the peppermint tea. Unfortunately the tea is caffeine free but it is very minty, which i like. And I had a banana.

More Vita holidays:

Fitness: i needed a looooong workout today after the weekend. So I decided to redo last Monday’s gym session. I started by doing pushups for the challenge (yes, still week 4 day 1:( ). I then ran for 30 mins on the treadmill, doing fartleks. These were tough, whenever I wanted to slow down I thought of cookies burning up (burn, burn, burn it up up upppp) haha. Stats:


After that i went to bootcamp class. The hour in there goes so fast! Today she used the bosu ball which was different and really exhausted my arms, abs and legs with different moves. She also used the kettlebell, which I have come to really enjoy. Another great hour and a half gym session and I still was home by 7:30.

I was starving when I got home. I made quick dinner of leftovers. Mixed veggies and white beans from last week, a little TJ wild rice, Morningstar chikn’ patty.

Condiments:

I love these veggies, lots of variety, excellent with hot sauce.

I also have had a love affair with chikn’ patties for a while. Mostly because they are so easy. Just heat in the microwave for 1-2 mins.

I decided I do not like this rice. I threw away most of the bag but kept trying it. It’s okay mixed with other stuff (you know, when the flavor is masked). Anyway I will definitely not be buying this variety again.

I really wanted to try my baking again so I had a cake ball and a cookie after dinner. Both were sooooo good today!! The cake ball was really moist and creamy. It tasted undercooked form the moisture of the jelly- in a good way. And I love the combo of chocolate, raspberry and white chocolate. These are awesome. The cookie is also delicious! They are very fluffy and cake-like and the pb and dark chocolate chips are so good in it. I am so proud of my guilt free desserts. Next time I will have to calculate the exact nutrtionals on these. There will be a next time.


Rubbing elbows at the Four Seasons

Finally Friday of my extremely busy week.

Started with a ww bagel thin toasted, naturally nutty cinnamon honey pb, and sugar free raspberry reserves. “Ooooooh it’s a jar of preserves” -family guy.

I had to give a speech for a work vendor and I was preparing all morning and ate this banana while looking over my notes. No pic… I also drank some of my final eggnoggin’ tea :(.

Lunch was at the Four Season’s and awesomely plated. Started with salad with lots of strange tree-like greens and half a grainy roll.

Main course was juicy chicken I took the skin off of and ate 2/3 of with a side of fried eggplant and grilled tomato.

Dessert was awesome as well. This was like a chocolate lava cake. When you prodded the cake exterior is was oozing in the middle with chocolate good ness. I ate the middle out of said cake and left the cake. Everything else was consumed also… I love whipped cream, ice cream, and white chocolate raspberry sticks!

Fitness: I wanted to go to rowing but I was held up at work. I went home and did my “at home body weight and interval” workout. Took me about 50 mins to go through twice. I will post the workout soon!

Amazing Saxby’s latte. I love Saxby’s because they have a huge variety of sugar free syrup. I recreated my seasonal splurge star bucks drink here! Non-fat, sugar-free peppermint, white chocolate latte. It was everything I hoped it would be. Star bucks really needs to get on the sugar free bandwagon. They only have 3 flavors now!


Airport Dinner Fail

Woke up this morning out of a deep sleep very confused because it was 7am and my alarm was set for 630am. I still managed to shower, finish packing, and get to work on time! I went to bed at 930pm so I guess i just really needed to rest to get rid of the rest of this illness. I feel pretty good today. I think one more night of sleep and I’ll be 100% and ready to run the 5k tomorrow before feasting on turkey.

For breakfast I stole another of roommate Lauren’s fiber one blueberry muffins. This time I got a pic before digging in. Still delicious warmed up. Braeburn apple on the side. This one was much better than the one last week! Exactly how I like them tart and not gritty.

I’m feeling very christmasy already so this eggnog’n tea hit the spot when I started to get hungry at 1030. Caffeine is a trick I use to curb my hunger at work. Most of the time I am just sitting in my cube thinking about my next meal so keeping my taste buds busy with the appetite suppressing caffeine helps.

At 1130 I had blown right through snack time so I had a few pistachios to tide me over before lunch at noon.

For lunch I was feeling Mexican and so I had the chicken enchilada suiza lean cuisine.

Goya on top. This is always a favorite. Mix the sauce from the enchilada on to the rice and enjoy. Side note: I sometimes like to use 2 hot sauces on this. One super spicy to mix in the enchilada sauce and goya to moisten the rice. I forewent today since my stomach is probably still healing.

Left work at 230 to get to the airport via cab. I tried a new company this time after 2 bad experiences with the local co and they were late too! Annoying. Luckily I had left plenty of time. When I got to the airport it was only about 430 but I was ready for dinner. I checked online and there was supposed to be a burger king that I figured I could get a chicken sandwich at but it was user construction :(. This threw me for a loop! For some reason I got really nervous about stats (this is what not working out does to me. Even more psycho). I perused all my options and didn’t like any of them. I realized I had some time and took a walk to another terminal. A lady had bourbon chicken samples (typical). I took one and their ploy lured me in! But…They had calorie counts on the menu! I saw a cold noodle dish for few calories and the chicken dishes weren’t bad either. When I went up the lady was very pushy. There were no cold noodles and in my already freaking out mode I managed to order steamed rice, spicy chicken and was forced into a 3rd side of veggies but they were swimming in something…. Butter? They weren’t on the cal count list! I immediately threw out half the rice so I wouldn’t be tempted to eat it.

The meal…. was bad. The scoop of spicy chicken and veggies she gave me had about 2 slivers (tiny, thin slivers) of chicken and the rest was just buttery veggies. Lame. Learning my lesson about airport food. Not reliable. Packing my own.

I had a box of raisin snacky snack on the flight.

When I got to Houston (running to the gate because my time between flight was 30mins), my next flight was delayed. Of course after I sprinted through the airport like a crazy person (fitness for the day?) now I had some extra time. I wanted froyo but they only had columbo yogurt which I am not a huge fan of. I got this tall light vanilla frappuccino instead- milk serving for the day!

Now I’m in Phoenix! Colder then I expected.

Ps here is a great giveaway opp! I have been wanting to try coconut butter since I’ve seen in it the blog world. I found it at a small market near Dan’s house in NY but when I was looking at the stats the calorie count seemed pretty high and unnecessary so I didn’t buy it. Now I am having some remorse. I would love to try it! I love coconut! Hopefully I win! You can enter here if you want to be my competition!
