Embrace spring

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.


-salad mix
-grilled chicken pieces
-apple chunks
-rf blue cheese
-pomegranate blueberry vinaigrette


The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…


Taco day

After last nights debacle I really want to get a good workout in tonight. Going to try and run 3 miles before hot yoga. Well see if it happens.

I am missing Pb and fluff lately. I gave up pb for lent and I an actually out of fluff. So this morning I made toast with sunflower butter and banana.


-2 slices sprouted soy crunch bread
-tbsp SFB
-banana

This was delicious and hit the spot.

Morning snack was a piece of cold and doughy Philly soft pretzel. .


Lunch was provided by work today. It was a challenge because it’s Friday and I can’t eat meat… And also taco day. Luckily they had veggies and beans. My plates:


-1 flour tortilla
-refried beans
-tomato
-lettuce
-black olives
-pickled jalapeño
-salsa
-guacamole
-little bit of cheese

I also had some chips on the side.


And a diet snapple.


For dessert I had a little coconut chocolate bite thing and a cookie.


The cookies were deliciously soft and under done. Love.

I tried to get back on track in the afternoon but not after pcketing 2 cookies for tonight haha. Cup o’ grapes.

Fitness: I hadn’t been to hot yoga in a few weeks and I got another sweet living social deal for the studio near my house so tonight seemed like a good time to return. I was slated to run 2 miles but since I have rescheduled my week a little bit I rushed over to try and get 3 miles in before class. This didnt really work. I only had time for 2. I really pushed it though! One was 8:05 an the next was 8:32. I hurried and went in just in time for class. I really appreciate hot yoga as a great sweaty stretch session during my half marathon training.

Dinner was at home.

Wile I made my salad, I snack on some tribe hummus and everything bagel pretzels. The Tribe Origins is just as creamy and delicious as sabra. Excited other brands are stepping it up!

-green beans (uncooked for crunch)
-baby bella mushrooms that I stir fried for a bit
-some of my roommates RF cilantro dressing
-couple scoops of everything bagel pretzels on the side

The salad was good. I made it without eating meat on Friday and did not resort to pizza!


For dessert I had one of the cookies I hoarded from lunch. Still so soft and amazing!


Promotion

Good news! I got a promotion at work today. I am now officially Marketing Specialist. I don’t generally talk about work on this blog as a rule or even reveal where I work so I’ll leave it at that. No worries, you will still be seeing many snacking in the cubicle shots.

On that note, breakfast in the cube (as it is every morning) was cereal and milk I packed from home. I don’t do this often because I have to carry an extra container with milk (why don’t I have milk for the office.. Yeah, I don’t know. Too much work).


-last of my grape nuts, little less then a cup
-handful of blueberry muesli
-half a banana
-skim milk (I don’t measure, just like to drown my cereal in it)

I need more grapenuts. I love them. So filling an versatile. A great addition for cereal mixes.

Morning snack was the other half of the morning banana and some mixed nuts. This time I added cocoa almonds to the mix.


For lunch our department decided to go out and we went to a local place called Wild Rice. The menu was full of all kinds Asian dishes like rice bowls, dim sum, pho, and sushi. There was a lot to choose from!

I went with the Chirashi which was basically a bunch of sashimi with a little side of rice.


It also came with miso soup and a salad.


I ate almost everything and it was delicious. Also very good portion sizes. I say almost because the Ginger salad was covered in Ginger dressing so I skipped a lot of that. The rest was great.

Afternoon snack was an appale.  I also had a few cocoa almonds on the side for filling fat.


Vita top in my uggs that I wore into work this morning (I later changed into heels, no worries) Yes, it is still freezing here. In april.


Fitness: normal wed routine refer to the my workouts tab.

Dinner was a la Jae tonight. He is moving soon which makes me sad to think about :( and will probably make the blog less interesting haha. He made homemade mashed potatoes, shake and bake pork, rolls, and stir fry veggies.


-the mashed potatoes were made with a little margarine and low fat milk


-the pork was first coated with stone ground mustard and then dipped in shake and bake and baked (soooo good!)


-he had 2 veggie choices (sampled both of those)


-had half a roll. Mmmmm so flakey.


Fruit-filled day

For some reason my legs are super sore after my rub yesterday. I kept waking up in the middle of the night thinking how sore I am. Weird. I don’t think I stretched enough or something. I always stretch well in my classes so will make sure to spend some extra time on that tonight.

My breakfast was chosen for 2 reasons. I have a ton of fruit as I mentioned yesterday and my legs needed some protein to recover.


-2 scrambles eggs from the cafe downstairs
-pear
-orange
-gold peak diet iced tea (bought downstairs on a whim)


This was just what I needed. I am really enjoying the array of fruit I have this week. I need to remember that in the future instead of just buying a bad of one type for the week.


Morning snack was more fruit, a banana still nursing my tea from breakfast.


And a few cocoa roast almonds.


Lunch was Campbell’s savory chicken and long grain rice soup. I added lots of hot sauce.


And had the last of my butter snaps on the side.


My afternoon snack was the same as yesterday and stuck with the fruit theme: strawberries and pineapple. Mmm.

Fitness: Did 100 pushup challenge w4 d1 during a work break and completed it for the first time!! Indie 121 pushups total (with breaks). Moving on up! After work I taught my kickboxing class. My legs were still pretty tired and with the thought of 7 more miles left to do this week I didn’t push myself quite as hard as usual. Not sure my legs would have had it anyway. Hopefully they get it together for tomorrow.

Dinner was leftovers from Monday with a twist.


-seared tuna (reheated with jalapeño mustard)
-a few stalks asparagus
-olives
-spinach
-couple tbsp part skim mozz
-little more then a tbsp ff thousand island dressing
-small side of rf kettle chips chips for crunch and a little extra fat (not the good kind but still filling)


This was awesome! The jalapeño mustard was really what that tuna needed. I was skeptical about this salad because I didn’t have much on hand to throw into it but I guess sometimes simple works.


I decided the other day I need to add a little more fat (the healthy kind mostly) into my diet during the week. It definitely keeps me from getting hungry. Yesterday was a good example. I ate really low fat all day and was star ing at 6:30 and wanted to binge. Anyway I’ll try and add some fat here and there with part skim cheese instead of nonfat, olives or avocados or things with omega 3s, nuts, etc. I guess we’ll see if can stick with it without adding too many calories.

I had planned to have a cadbury cream egg for dessert but I actually wasn’t hungry for it. My serving of chips felt like my splurge for the night and I was satisfied.

I am currently watching the new (last week) episode of Sister Wives. I have a strange obsession with this show. Its just so strange to me I have to watch. Anyway back to Cody and fam.


Faux spaghetti

Since I got in to work so early yesterday because no one is on the road these days, I let myself sleep and extra half hour. I still made it in on time. Love the lack of traffic!

I really wanted oats for breakfast but I had no banana to whip in to make them creamy so I did a 180 and toasted a pumpkin vita top ad made grits instead.


Morning snack was this reserved pomegranate greek yogurt from TJ’s. This was so good! 110 calories, thick and creamy. definitely need to buy again.


For lunch I had a Smart Ones Pasta with Ricotta and Spinach.


This was the first time I’ve ever had this and it was amazing! lots of cheesy sauce, lots of spinach, creamy ricotta. I kicked it up with a little salt and crushed red pepper. My only qualm was the calories were a little low (about 260) could have used some protein in there. I added this side of mini airplane pretzels I had in my desk (50 cals) to bulk it up.


At lunch I went out and got a pedicure since no one was around. She rubbed my shins a lot which felt awesome and then rubbed smooth, hot, oiled up stones on my legs which felt great. of course I later found that a few toes were ruined either by my spin shoes or just my regular shoes (reason #100973 why you should live in a climate where you can always wear flops).

Afternoon snack was some gingersnappsh tea and 18 cocoa roasted almonds.. I weighed them out they were about 2/3 of an oz so between 100-150 calories. Missed getting a photo because I was too busy weighing. Oops.

Vita Preworkout


Fitness: I had a hard time deciding what workout I wanted to do today. I decided on rowing class since I haven’t been in a while but right before I left I realized that because of the holiday i risked it being dead and just being a class of me and the instructor. In a quick turn of events, I decided to take a spin class. However when I got there no instructor showed up so I ended up teaching it (been happening often to me i guess). Even though I wasn’t in the teaching mind set I got into it and the class flew by. I love getting paid to do something I would be doing anyway!

Special dinner… I have been dying to try spaghetti squash recently so I checked at the Acme by my gym and they had it! A big one! I snacked on a tbsp TJ’s cilantro jalapeño hummus and butter snaps while making.


1. I started by halving the squash. This was tough it took a lot of muscle to cut through the uncooked skin.


2. Put half in a bowl and microwaved for 12 minutes until it was soft.
3. Scooped out top seeds and strands and threw away.
4. Using a fork scooped out the innards. This is when it started looking like spaghetti.


5. Top with sauce and eat.


I decided to make my own sauce flavor today… Not sure why. I used crushed tomatoes, and added crushed red, garlic powder, onion powder, salt, mrs dash Italian medley, oregano, and capers withe the juice. It turned out spicy and caper-y. I loved it.


I paired my meal with 5 perdue turkey meatballs that I heated in the oven while the squash was using the microwave (what I normally would have used).


The squash was an awesome spaghetti substitute. It was very filling, good texture… I will definitely make again!

I had the last of a salad bag with a tbsp of the hummus and some balsamic vinegar for some green and as another way to eat more hummus.


So nice to have off tomorrow! I mustered up energy to sweep my room but not enough to put everything away but I have a load of laundry in. Now I’m watching Nova play Temple in my sweats. Gonna go to bed early because I have big plans of gym and pampering tomorrow. :)

Dessert… I cant stop eating dessert these days! It’s getting out of hand! I broke into my gift from my brother Shawn… 72 chocolate covered cherries. It was a thoughtful gift remembering my childhood love for these but I need to get them out of the house so I don’t wake up and they are all gone one day and I’ve eaten 4,000 calories of chocolate and cherries. Anyway I had one and it was deliciously goupy but not sweet. Not as good as I remember. I think I might prefer the cream kind now because of my love of icing. I did enjoy it though, brought me back.

Back home to the snow

Well I’m back in Philly. I was greeted by lots of snow :(.

Similar to this but not quite as bad (pic from last terrible winter storm). Actually i am being dramatic and thats e only snowy pic i have on hand :) this storm was nowhere near as bad but I hate snow unless I don’t have to be anywhere until it melts or I’m skiing.

Dan and I arrived at the Philly airport only 10 mins late and had to wait to get off for about 30 mins. Unpleasant but could have been worse. In an event of quick thinking we had the cab driver drop Dan at 30th st station to train it home and then drop me in snowy Manayunk. I was not happy to see the very icy streets and the fully snow covered steps leading to my house. I dropped my stuff off and was determined to get rid of the snow so i didn’t have to deal with it before work in the morning. I put on my rain boots, found the snow shovel and salt and hit the streets.

Lucky for me the snow was really powdery and did not take too lng to get off the stairs and create a path in front of my house. I then sprinkled salt to make sure there were no slippery patches.

The best part of my night was when I went to my car and there was NO SNOW on it!! God smiled upon me and said you are my most wondrous creation. Also the snow around the tires was minimal and light and fluffy so I am pretty sure I should be fine getting out. Just to be safe a shoveled a bit of it away.

When I was finished shoveling I made dinner with what I had in the house.

Spinach artichoke chicken lean pocket covered in Frank’s Red Hot and a mixed green salad with the last of my sabra Greek olive hummus and some balsamic vinegar.

I got the idea for hummus and balsamic from Gina and it was really good. Since i usually crave hummus and will eat it as a really unnecessary appetizer to my dinners, this is a great way for me to get my hummus fix without inhaling to s of pretzels and other random calories I don’t need.


Rubbing elbows at the Four Seasons

Finally Friday of my extremely busy week.

Started with a ww bagel thin toasted, naturally nutty cinnamon honey pb, and sugar free raspberry reserves. “Ooooooh it’s a jar of preserves” -family guy.

I had to give a speech for a work vendor and I was preparing all morning and ate this banana while looking over my notes. No pic… I also drank some of my final eggnoggin’ tea :(.

Lunch was at the Four Season’s and awesomely plated. Started with salad with lots of strange tree-like greens and half a grainy roll.

Main course was juicy chicken I took the skin off of and ate 2/3 of with a side of fried eggplant and grilled tomato.

Dessert was awesome as well. This was like a chocolate lava cake. When you prodded the cake exterior is was oozing in the middle with chocolate good ness. I ate the middle out of said cake and left the cake. Everything else was consumed also… I love whipped cream, ice cream, and white chocolate raspberry sticks!

Fitness: I wanted to go to rowing but I was held up at work. I went home and did my “at home body weight and interval” workout. Took me about 50 mins to go through twice. I will post the workout soon!

Amazing Saxby’s latte. I love Saxby’s because they have a huge variety of sugar free syrup. I recreated my seasonal splurge star bucks drink here! Non-fat, sugar-free peppermint, white chocolate latte. It was everything I hoped it would be. Star bucks really needs to get on the sugar free bandwagon. They only have 3 flavors now!
