Busy= missing posts

December 10, 2010

Back tracking to Thursday… It was super busy. Another all day meeting.

Started the day with oats.

Cheesy pear oats

-1/2 c multi grain
-1/8 c steel cut
-1/4 c ricotta (end of the cheeeeeeese so I ate it in the container)
-pinch salt
-pumpkin pie spice
-sweet n low packet
-half pear
-water

Lunch was a horrible experience. I took one sandwich that ended up being covered in dressing.. Nightmare. I switched it out for this ham and cheese on rye with mustard.

Pear side:

I ended up removing some of the bread when I realize it might be honey mustard dressing on it. I also got rid of some of the cheese, you couldn’t taste it on the sandwich anyway.

The leftovers:

Some chips… So hard to resist.

Banana for a snack before the holiday party.

At the holiday party I had 3 hor devours that I didn’t get pics of. I would have eaten more but I was busy being the company photographer. A bacon wrapped scallop… Awesome. A cheesesteak spring roll…awesome. salmon and cream cheese lollipop… Awful. Waaaay to much cream cheese… it was all you could taste.

Dinner plate:

-tilapia
-green beans
-eggplant and roasted tomato
-mashed po-tots

The dinner food was excellent. It was the best of our company holiday party that I have attended. For dessert o had a small pumpkin bread thing.. I was not too happy about this, i am pumpkined put this season and an awesome peanut torte bite thing. It was creamy and had peanut pieces in a delicious crusty shell.

Throughout the night I had 2 glasses of merlot. Managed to sneak a pic of one:

At the after party at Iron Hill Brewery I had a raspberry wheat beer that was great. Need to go back there for a tasting.

Moroccan flava

December 8, 2010

I had an all day meeting 8:30 am- 4:30 pm today and of course, despite every effort to be on time, the traffic was horrendous and I was running late. Food is provided at the meetings, but it’s usually danishes and muffins for breakfast, so I quickly made my oats before I went down to the meeting. This was a new variety!

Cheesy apple oats

-1/2 c multi grain oats
-1/2 c ricotta
-sprinkle pumpkin pie spice
-pinch salt
-sweet n low packet
-half an apple cut up
-water (put a little too much for my liking but made for a nice pic)

It was scrumtrulescent. The ricotta made it creamy and the apple was baked in the microwave and was soft and sweet.

I snacked on this bite of coworker jodi’s chocolate chip scone (left) and a coffee with one packet splenda (not pictured).

Lunch was provided and I modified it. It was a lunch box that had a roast beef sandwich, banana, brownie and cookie, and homemade chips.

I pulled off the sides of bread that had mayo and ate half the sandwich and the meat from the other half. The bread was an onion roll and was very dry and crumbly. Not in a good way. The meat was also way overdone. I am not a fan of most rare meats, but roast beef needs to be raaaare. Sandwich- ehhh :/.

I also ate the other half of the apple from the morning.

And I portioned out some of the homemade chips (because they are my weakness and I love them but they are greasy so I always feel kind of gross after). Mmmmm

For afternoon snack I had a banana.

Hidden vita top sponsored by coworker Leslie’s bling office supplies. Season’s greetings.

Fitness: taught a wonderfully hard kickboxing class. Felt much better then I did on Monday!

Dinner was a la Jae!

He starving crew, Lauren, chris, me emaciated and waiting to be fed:

Started with this small glass of red wine.

Dinner finally served!

Dinner was shrimp in Moroccan spices, chicken, Spanish rice, and salad of greens and tomato drizzled with lite balsamic vinaigrette. My plate:

Shrimp. These were big and spicy and so flavorful. Jae brought the spice back from our trip to Morocco in October (hence the picture of me with the monkeys). The food there was great with lots of couscous, tajine, and salads. They also had huge spice markets called souks where we purchase spices for really cheap.

Chicken had a lemony kick.

Rice was a touch al dente and I liked it that way.

Fresh and simple salad.

The starving crew emaciated and waiting to be fed:
I had 3 of these mints before bed. I can never have see in the house again apparently haha.

Running in the rain…

November 18, 2010

Woke up this morning pretty tired but I rallied to finally unpack my suitcase from last weekend and put away laundry. Productivity where I can fit it in is always good.

When I got down to the kitchen to throw my daily snacks in my purse I saw a tub of low fat ricotta I still had from when Dan and I made eggplant lasagna so i threw a few tbsp in a tupperware knowing i could use it for something.

That’s how this creation was born:

  • 1 whole whate bagel thin, toasted (slightly blackened.. oops)
  • 2 tbsp low fat ricotta
  • 1 tbsp apples butter
  • sprinkle of salt

Pear on the side but I think it would have been good in the sandwich as well. Tha sandwich was really good– apple butter and cheese combos i’ve been using for a while (i usually use Laughing Cow Light Original but the ricotta worked nicely). You could do without the salt but I thought it might be too sweet otherwise… and I love salt.

For my morning snack I again had a banana while working in my cube.

Lunch is a new lean cuisine I have never tried before! Pasta Romano with bacon.

Going to go with the crushed red pepper flakes on this one.

This was a really good lean cuisine and will most likely enter the rotation. You could definitely taste bacon in it, lots of sauce, good amount of pasta. Highly suggested.

Snack is a Braeburn apple. I like my apples tart like a green apple but the consistency of a fuji. the display at the grocery store made these seem right up my alley (sorry no pic of said display). The consistency of this apple did dissapoint. it was too grainy like a red delicious. too bad i have like 6 of these in my fridge at home :(

Preworkout snack is a PB vita top… In the loving claw of our marketing “friend” the lobster. Who is still sporting his sheriff Halloween costume.

My workout today was a 5.3 mile run through Manayunk. I haven’t run in a while but really wanted to so I was very sad when i left work and it was slightly raining. I had almost given up and started driving to the gym to workout there but the thought of running on the treadmill just sounded awful to me.  Luckily by the time i headed out for the run it had stopped raining.. there was no wind.. a brisk 50 degrees… great running weather with a few layers on.  Anyway the new path I had routed myself was quite hilly but I felt pretty good during it.  It took me abotu an hour to run which i am kind of upset about but Manayunk hills are rather steep so i’ll blame them.

Dinner is leftovers from last night heated up in the microwave and eaten while packing for NY and getting ready for volleyball and blogging.

Not so pretty to look at:

  • -quater of baked potato
  • eggplant slices
  • chicken breast and mushrooms
  • big dallop of FF sour cream over all of it
  • and of course…  chipotle Tabasco:

With a BIG glass of milk on the side because its about to go bad.

Walking over to the game- about 2/3 of a mile away- first playoff game for the Loose Seals (any Arrested Development watchers?- love that show).

This was quite a dillemma for me tonight… Would you rather run in slight rain or on the treadmill??
