Diet-to-go abandoned

I found another reason this morning that diet-to-go is not for me. I like to eat what I feel like eating. I froze 2 of the meals for when I feel like eating them later. And went back to pb for breakfast.


-last 2 slices carb style bread
-tbsp RF pb
-tbsp fluff
-tbsp sf jelly

I missed you.

For my morning snack I stole these clementines from my roommate. Thanks, Lauren! I had 3 since they are small.


Lunch I went back to diet-to-go because that’s what I had on hand at work. This was supposed to be Thursday’s but I thought it was a little too many calories for yesterday. Friday I generally eat a little more so I had the 470 calorie lunch which got downsized and then had some additions.

Hummus, Pocket bread, carrot and cranberry salad (added terra chips)


The hummus and pocket bread were good but overly bready and small. I didn’t finish the hummus it was a huge serving for the small bread.


I did not like the cranberry salad. Can’t really explain it, not for me.


I added the terra chips from the lunch the other day to beef up my meal.

My afternoon snack was a box of Raisels I had in my work stash.

Fitness: it was on my schedule to run 2 miles today but I had said I would sub the 5:45 kick boxing class at the gym tonight. I managed to get there, run 2 miles on the treadmill in 26:33 minutes (!) and get to the kickboxing class on time! I did the run fartlek style so the quick pace i was trying to bang out would seem less daunting it worked Amazingly I wasn’t super exhausted afterward.

Lauren came to my class and we decided to order dinner afterward. I was craving the tuna sashimi I has the other day from Shan Chuan. Tekka Don and this time I knew to add green.

This was epic as Charlie Sheen would say. Winning!

After I picked up Dan we stopped for dessert. Hot fudge sundae. They forgot the juts so I added chopped pecans I happened to have at home. Mmmmm.

Rain and Train

Exciting day, well sort of, It’s my first official day of half marathon training! What a lovely rainy day it is for it. Hoping the rain goes away so I can run outside tonight. I am excited to have a structured plan to follow for a little bit and mix up my routine.

Breakfast: didn’t go to the grocery store last week so don’t have many options. I did have vita tops and pb though.

Choc PB Pumpkin Vita Sandwich


-pumpkin vita top cut in half and heated
-1 tbsp naturally nutty choc cherry pb

Not as good as the choc vita and pb combo but still a good easy breakfast.

Morning snack was some frozen very cherry berry blend from trader joe’s.


Lunch was a lean pocket and 20 (about 100 cals) savory herd special k crackers. All dipped in hot sauce of course.


Afternoon snack was a fat free chocolate snack pack someone had given me at work. I mixed in a few mixed nuts for some added protein and crunchy, salty, deliciousness. Good snack.


I also had a grande skinny caramel latte that my boss brought back from a Starbucks run.

Fitness: as I mentioned this week starts my training. At my work break i decided to move on and try my hand at W4D2 of pushups. Couldnt do it all but gave it a pretty good run. 25-29-25-25-19 (was supposed to do 36+ on the last one) with 90 secs in between. Later, I was slated to run 3 miles ended up per the garmin at 3.14 and took 26:50 (avg pace 8:33) Which is fast for me! I was huffing and puffing at the end.

30 mins is less time then I usually workout (i prefer to get in a full hour a day) so I decided I would add a weight session to days with runs under an hour. Besides, i haven’t done much weight lifting since committing to the 100 pushup challenge and i could really use it. I went with an on demand total body sculpt program. It was 20 mins long and used 10 lb weights. It was not very hard and didn’t do enough reps of the exercises to tire my muscles. Would not do this one again. To get the full our I also did a 10 sexy legs. This one was good for 10 mins and had some new leg moves I have never seen. Next time I need to kick up the weight session though- maybe go with the Jackie Werner on demand stuff as I originally planned. Off to volleyball later tonight. Last game of the season before playoffs.

While I was doing the weights in my living room I roasted some asparagus in the oven. Best way to cook it- about 30 mins at 350. The ends get a little burnt and crispy and somehow extremely delicious. Since I still haven’t gone to the grocery store I still have limited options. I paired the roasted asparagus with a hormel compleats roast beef and gravy (which is a top mashed potatoes).


The combination was very good. A little too salty and not the best mashed potatoes but what can you expect for something that heats up in 90 secs.


Now I am watching nova get killed by Notre Dame. Observations:
1. Where does Notre dame get so many good white athletes. We only ever have one token white kid that never plays.
2. Did the ND student section chant “shots, shots, shots…” during one of our free throw attempts? Because if they did, I can respect that.
3. Fish in a barrel, my friend. Nova’s the fish Notre dames court is the barrel. (towns the fish, people are the barrel….)

Morning Fitness: actually woke up early this morning (5:10am) and went to a cycle class at the gym. Unfortunately it was a Johnny G trained instructor (I have this certification also, ironically, but don’t believe in following it exactly). You can tell when you’ve gone to one of these instructors because the class will have a focus of intervals, endurance, or hills and they might talk about your cadence or rpm. Anyway the classes are boring. The teacher today was doing an endurance class and he basically just had us ride out of the saddle 3 times for 20 minutes at a time. It was ridiculously boring!

Here comes my rant… I see the point of the Johnny G method if you are spinning everyday or if you have a gym dedicated to cyclists and spinners. However at the average run of the mill gym people are doing all kinds of things. I doubt many people are taking spin everyday and if they are it is very easy in a cycle class to fit it to whatever it is your workout routine is calling for that day (I.e. if its a hard die turn up the resistance). The beauty of spinning is it is so customizable no need to make it a dedicated endurance class. Thus it is pointless to follow the Johnny G method when people are really just looking for a fun workout– mix it up, make it fun, and people can motivate themselves to make it as hard or easy as they want. The end.

Anyway, the workout was boring but it worked for me today. The lame “endurance drills”, if you can call just telling people to ride for 20 mins straight a drill, worked for me because my legs were so sore they were getting easily tuckered out and raising my heart rate. I guess it worked out but I will try to avoid that teacher in the future may only give him another chance to redeem himself.

While getting ready for work I had some instant coffee. Not as good as the starbucks via.


Breakfast was a quick grab since I wanted to get to work on time and thus leave on time. I grabbed my last slices of cinnamon raisin sprouted bread and i put a tbsp of pb and a tbsp of fluff into a plastic baggy (not ideal btw). I toasted the bread and waaa-laaa cinnamon raisin fluffernutter. I have thought of so many vehicles to consume fluff and pb these days. And sorry, still not sick of it. Sugary peanut buttery goodness.


Morning snack was an apple.


Lunch was reworked leftovers from Jae’s thursday night dinner.

  • Moroccan spiced pork
  • hot and honey mustard
  • on half a piece of whole wheat naan
  • side of butter snaps (one serving at 120 calories)

I also had a chocolate covered strawberry that a coworker had gotten for her birthday. and (the moooore you knoooow) it was 50 calories- someone looked it up. not me, I swear.


Afternoon snack was a Samoa Cookie fiber plus caramel, coconut, fudge bar. Still in love.


Before meeting my roommate for happy hour I decided to eat light because i anticipated eating again after boozing. I had a bowl of cereal with grapeNuts and fiber plus cinnamon thingys. The ,ox was a good one.


I also had a rice crispy treat.


We went to Drinkers in rittenhouse and drank some delicious pitchers of blue moon. Then my friend pat though it would be a good idea to get 10 hotdogs and 10 tacos. I think I had like 7 tacos. Sick, sick display, but delicious none the less. Unfortunately or maybe fortunately… I was three sheets to the wind at this point and stopped shooting photos

Breakfast I haven’t had on a while… 1/2c grape nuts cereal and half banana with skim milk.


I love how these sink to the bottom of the bowl and are so crunchy. Combined with the soft banana delicious.


Morning snack was the other half of my banana and a peach. Mixing up the fruit!


For lunch I tried a new Tasty Bite I have never had before. Malaysian Lodeh.


It had tofu (really deliciously spiced) and veggies. I think the veggies were carrots, baby corn, and okra or green beans, not really sure. It was soooo good!


I dipped half of my everything bagel thin in it to sop up the awesome curry-like sauce.


Afternoon snack was an apple and a green tea while watching a webinar.


I forgot to pack my vita top of the day and had no backups in ny work stash so i spread a tbsp of naturally nutty choc cherry pb on the other half of my bagel thin (hence why I saved it).


Fitness: usual wed routine (as always see my workouts tab). I was really tired going into the class and had a very hard time pushing myself today. Twas rough.

Dinner was thanks to a sale at acme. Asparagus was super cheap and is something I don’t make often. While I was preparing the meal I snacked on some special k crackers and hummus.


-roasted asparagus and portabella mushrooms
-mango chicken sausage from TJs
-sans spicy mustard for dipping
-small serving of leftover mac n cheese


All I did was spray these with cooking spray and slap the asparagus and mushrooms in the oven for about 15 mins on broil. When they were done i topped with some salt and rf Parmesan. This was such an easy way to make asparagus! I especially liked the crispy ends.


The sausage I just sizzled up in a pan on the stove to get some crispiness outside.I microwaved for a bit to make sure it was hot. This sausage was really good. There were actually chunks of mango in it which was a pleasant sweet surprise.


For dessert, I have been craving dark choc. I had a square of lindt dark with a touch of sea salt. Soooo good!


Dan’s Birth

…day! Happy birthday, little guy.

My camera battery was still dead today so excuse the iPhone photos.

For breakfast I went back to pb, jelly, and fluff. Sooooo delicious.


Morning snack was an apple.


Lunch out courtesy of a work vendor. We went downstairs to our local cafe. They didn’t have the hummus for my usual veggie wrap, so I improvised. This is their fajita wrap without the cheese and sour cream. I ate the first half (this is the leftovers. You get the picture).


It had grilled chicken, peppers, and onions in a panini pressed wrap. I spooned on salsa and hot sauce. I had a tiny 70 calorie bag of chips on the side (not pictured).


In the afternoon, I snacked on a slice of sprouted wheat cinnamon raisin bread topped with spray butter.


The vendor came bearing gifts! This was my favorite one… A Starbucks-like tumbler. I posed my vita top with it. I was embarrassingly excited about this haha.


Fitness: I had a pretty nice (treadmill) run today. 3.5 miles in 30 mins. Then I walked/ jogged to make it 4 miles in 37 mins. After the run I took a yoga class. The class was actually pretty hard. She did a lot of balancing poses in a row which had my legs tiring and cramping up. It also felt good to stretch out after the run. Run then yoga combo is a love of mine.

By the time I got home, I was REALLY hungry so I was glad to have leftovers of Jae’s jumbalaya from yesterday. I think I forgot to mention their were white beans in this also. Tonight leftovers had no sausage and only shrimp (must have scooped poorly yesterday). It was again really good though!


I also had a slice of the ciabatta from last night toasted with spray butter.

And a side of olive bar mix. A few cubes of cheese, mushroom, red pepper, and o’ course olives.


Now my legs are feeling like jelly and it’s time for bed. I haven’t gotten to wish Dan a happy birthday because his phone is dead! Waiting to do that and going to bed.

You’re cold as ice to me! Singing that as I scraped the obnoxious ice off my car this morning. Really had to chip away at that. So annoying.

I made breakfast at home before coming to work.


-2 slices carb style bread
-1 tbsp reduced fat pb
-1 tbsp marshmallow fluff
-2 tbsp sugar free raspberry jelly


I love pb and fluff. This was delicious! I scaled down the servings of the pure sugar and pb to make this an about 250 calorie breakfast. The bread was high protein and fiber so that helped keep me full.

I snacked on an apple mid morning. And a coffee. Both ofnwuicho forgot to snap pics of apparently… sorry. just shows, been needing coffee thus far this week. I think I’m missing some sleep.

Lunch was Amy’s enchilada with Spanish ice and beans and some baked tostitos.

This amys isn’t my favorite. It needed salt but I am always hesitant to add salt to frozen meals. I would still buy again but I would start with the other varieties first.


Chips were good for sopping the beans.


And suicide hot sauce for my hotness.

As an aside if you haven’t noticed I’ve been eating a little more on Tuesdays. I don’t get home until 8 on tues and am always ravenous. So, I am trying to eat a little more during the day so I don’t binge when I get home and am rushing to make dinner. So far it is working out. I’m only adding an extra maybe 100 calories but I think it helps.

Fitness: W3 D2 of 100 pushup challenge. I manhandled this one. Well not really but it was manageable. Tough at the end when I had to do 25+, but i was able to do 33. I kind of just want this challenge to end! But I am sticking to it. Aside from that I did my normal Tuesday workout (see my workouts tab).

So I mentioned making Mac n cheese on Sunday and I was saving the recipe for when I served it. Today I realized I wasn’t serving it because it’s Jae’s turn to cook. So I had it for dinner.


-whole wheat Mac n cheese
-imitation crab (I ate it cold this time)
-broccoli, snap pea, and broccoli slaw
-extra hot cocktail sauce (!) and some light peppercorn ranch for dipping


Now for the Mac n cheeeeeeese (pronounced as in old school) recipe


-whole wheat pasta. I chose shells cause they reminded me of velvet shells n cheese.
-fat free cottage cheese
-nutritional yeast (just discovered this from the blog world. It is super good for you and has a cheesy nutty flavor)
-ff cheddar i used slices but shredded would have been perfect as well.
-whole wheat flour (for thickening)
-salt, pepper, cayenne, nutmeg for spice

1. Cook your pasta as normal
2. Put cottage cheese in a pot on the stove
3. When it becomes smooth stir in nutritional yeast (to taste. You actually can skip this step if nutritional yeast scares you but u wanted to try it and it seemed like it couldn’t hurt)
4. Stir in cheddar.
5. Add spices to taste
6. Stir in ww flour to thicken to your liking
7. Pour over cooked pasta

This Mac n cheese is guilt free and turned out to be a really good healthy version. Dan was skeptical and approved! If your skeptical about the cottage cheese, it actually becomes smooth and is the “cream” in your dish. And if you don’t care for the nutritional yeast omit it. I am not sure it added much flavor.

The leftover version was good too. The Mac stuck together a little more and was delicious and whole wheaty.

Next time I make this I will top with shredded ff cheese and bread crumbs and bake in the oven a bit.


Freeeeeezing

‘m back to the real world… And blog world. And my weekly detox. It is really cold out. Colder then I can ever remember it being. I sat at my desk with a scarf and blanket on most of the day.

Breakfast was uninspired. Everything bagel thin and a heaping tbsp of reduced fat creamy pb.

My everyday vitamins. One multi (for obvious reasons) and one co-enzyme q10 (for migraines).

Banana snack.

Field trip to Wendy’s for lunch because it was so cold out, warm fast food was needed. I had a baked potato with cheddar and broccoli and a side salad with ff French dressing and a diet coke. (total calories 390). This was filling and cozy on a cold day.

Afternoon apple snack.

Vita coaster.

Fitness: tried to get into the spin class but it was full :(. I improvised and did 30 mins of fartleks on the treadmill and 20 mins on the step mill.

I had a volleyball game so I had to throw dinner together super fast- cooked and consumed in 10 mines. I made a spinach artichoke chicken lean pocket and covered it in fat free sour cream and dipped it in hot salsa. On the side I had a white cheddar rice cake.

And then another rice cake for the road.

Volleyball was good. We only had 5 people so we were at a bit of a disadvantage but we won 2 games and lost one.
