Southern Feast

I continued my productivity into the morning and i cleaned my shower before going to work. I like to clean my shower while I’m already getting in there to shower. Weird? Makes it easier I think.

My legs are super sore today from the running, weights, pilates and spinning this week. I am really hitting all my workouts this week. Recently I’ve had to modify my schedule and not do it all.

This morning I decided I needed the muscle healing protein of eggs. I had a smart ones egg mcmuffin knock off with a packet of ketchup on top. Slightly rubbery but good in a pinch.


Morning snack was a nectarine I bought yesterday at the produce stand. And a few cocoa roast almonds.


Lunch was a sesame chicken lean cuisine. Another favorite. The only problem with this one is that it seems very small. I have to cut up the chicken to drag out the eating process a bit.

I have been kind if hungry all day. For my snack I had my last white cheddar rice cake, some grapes (there weren’t many left) and some nuts.

Fitness: usual wed. Taught my kickboxing class with extremely sore legs (I think from my Jackie Warner workout on Monday).

Dinner was a new concoction Parmesan/old bay/corn flake Crusted Tilapia and inspired my southern feast.


I mixed together the parm, old bay seasoning, and crushed corn flakes and dipped the tilapia in skim milk and then into the mixture. I baked at 475 for 10 mins. For sides I did canned collard greens, super market mashed potatoes and crusty ciabatta bread (had half with spray butter).


This was delicious!! The fish turned out flakey and tasty. The only change I would have made is not used Parmesan because you couldn’t really taste it.


This was also the first time I ever had collard greens. I bought canned Glory brand that were preseasoned and they were so flavorful! They tasted slightly like hame, had a little spice, solo good. They paired great with my faux fried fish and mashed potatoes.


The potatoes I bought are the ones near the chicken in the supermarket. I am nt sure the brand but the country mash are delicious without a ton of added fat.

Really having a variety of breakfasts lately vs my normal routine of eating the same thing for weeks. Today I had Chobani Pomegranate Greek Yogurt and mixed with Kashi Good Friends cereal.


I love this yogurt! It is thick and creamy with tons of protein. It is basically plain tart Greek yogurt with the flavoring on the bottom you mix in. It’s delicious. Paired with some crunchy cereal I really enjoy it.

Morning snack was an apple and some mixed nuts.


Lunch was a tortilla crusted lean cuisine. I think it’s official that this is my favorite lean cuisine. The fish is so tasty and the rice has lots of corn and peppers and a delicious sour cream sauce. Perfect for hot sauce transport also. Out of the microwave:

I had a dr apt today and left work at 2:30. I had some grapes on the road.


Afterward it didn’t make much sense to return to the office for like 20 min so I ran some errands before my nightly gyming. I picked up some awesome cheap produce at this obscure stand on Ridge Ave which you will be seeing this week, got a pedicure for the wedding this weekend, went to the bank, and other odds and ends. Feeling productive.

I snacked on a fiber one bar and a small Dunkin donuts coffee with skim milk and sweet n low while running aforementioned errands.


Fitness: usual Tuesday routine of Pilates and teaching my spin class. I even had time to knock out my pushups which was not as difficult as i thought they would be since I lifted yesterday. I am still on w4d2 and in at 25-29-25-25-25. The last set should be 46 so I’ve got a ways to go.

Dinner was planned out to be quick (I’ve learned my lesson about starving on Tuesdays and needing food fast). I had spaghetti and meatball leftovers from Sunday.

Embrace spring

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.

The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…


Night.. Fail

So tonight is my first softball game of the season. You would think spring would be in full force and we would have pleasant weather, but it’s still bleh.

Breakfast was another one of the oat packets I bought. This one was Strawberries and Cream.

I added some chopped pecans and mixed in frozen berries.

My morning snack was going to be nuts and a banana.

But I ended up just eating the nuts and saving the banana to dip in my hot sauce at lunch with my lean pocket pretzel bread.

I also had a few saltines, with hot sauce o’ course…

Afternoon snack was a cup of grapes.

I call this “a vita top with a dream”.

Fitness: At work i did my pushups w4d2. I had big plans for this night, I was slated to run 4 miles and decided on doing a new out and back along main St and Manayunk canal. When I was done i planned on trying another on demand weight routine and then going to my first softball game of the season. However I got home from work and my stomach really started to bother me. I laid down in the fetal position for 10 mins, willing myself to get up. Eventually, i decided I was fine and i got ready. I even put on a tshirt I was excited about and took a pic! This is for Court!

Story on this: this tshirt is from a pub crawl I went on when I was visiting Prague two years ago. When my old roommate/ good friend Courtney and I tried on these small shirts it was after a week of eating German sausages, pretzels, and beer at Oktoberfest and they did not fit. It was like sausage casing. When I got back from Oktoberfest I was a few months into my relationship with Dan and we were going out to dinner all the time and not eating so well so I didn’t really lose the weight as quickly as I would have. I think I tried the shirt on one more time and it was still skin tight. I was excited today to have it fit! A good thing to think about before what was to follow…

So I started my run. About one mile in my stomach hurt again and I decided I needed to turn around. I tried to at least jog back but the whole thing was terrible, I ended up only going about 2.4 miles (in 27 mins :( ). Anyway I decided to just call it at that and die in my bed…. For the rest of the night. Sorry, softball team!

Anyway, despite my stomach troubles i was still really hungry thank god for leftovers.

I love going to Jaes for dinner because he’s always afraid he didn’t make enough and he doesn’t eat leftovers. So I always go home with at least one other meal. thanks, Jae!

After dinner I spent the remainder of the evening in bed with this cream egg staring me down. I had too, I was so depressed about my workout, what better comfort then more calories then I need.

So now that I’ve messed up my training plan going to have to run a little more on Saturday then I had planned. Plan should have been:
Thurs- 4 miles
Fri- 2 miles and hot yoga
Sat- really fast 5k

The reality will be:
Thurs- 2.4 miles
Fri- 2 miles and hot yoga
Sat- 4 miles (going to try and hold a fast pace for these)

Missing a mile in there but I guess that will be fine.


Tuna curry

Woke up this morning without the snooze button. First time in a while. I am still working through my food without going to the grocery store (special post about why tonight).

Breakfast was cereal mix. Last of fiber plus cinnamon oats and some grapenuts with skim milk. Love how grape nuts sink to the bottom. Mmmm


I was on a call during my morning snack time. I wanted my fruit but I could reach the work gifted ff snack pack and some mixed nuts. I need to buy more pudding, as i said yesterday, this is a tasty, chocolatey, salty snack.


Lunch was not frozen for once.

-last bits of my special k crackers


The tuna curry was so good. It had a little kick and the tuna was big chunks. However, this isn’t a dish to have often because it has 10 grams of fat (fine) but 9 of them are saturated. This is do to the coconut milk but still not a very good stat.


Afternoon snack… I finally got out the fruit. Cup full of very cherry berry blend from TJ’s.

Fitness: missed pilates today when I went to pick up my food (again explanation to come) bought taught my usual spin class. It was a good one. Lots of speed work with some hills thrown in which is pretty normal, but today I was out of breath often. Sign of a good workout.

My dinner is going to be on the next post because I have a special meal plan going on the next few days. To be continued…


Rain and Train

Exciting day, well sort of, It’s my first official day of half marathon training! What a lovely rainy day it is for it. Hoping the rain goes away so I can run outside tonight. I am excited to have a structured plan to follow for a little bit and mix up my routine.

Breakfast: didn’t go to the grocery store last week so don’t have many options. I did have vita tops and pb though.

Choc PB Pumpkin Vita Sandwich


-pumpkin vita top cut in half and heated
-1 tbsp naturally nutty choc cherry pb

Not as good as the choc vita and pb combo but still a good easy breakfast.

Morning snack was some frozen very cherry berry blend from trader joe’s.


Lunch was a lean pocket and 20 (about 100 cals) savory herd special k crackers. All dipped in hot sauce of course.


Afternoon snack was a fat free chocolate snack pack someone had given me at work. I mixed in a few mixed nuts for some added protein and crunchy, salty, deliciousness. Good snack.


I also had a grande skinny caramel latte that my boss brought back from a Starbucks run.

Fitness: as I mentioned this week starts my training. At my work break i decided to move on and try my hand at W4D2 of pushups. Couldnt do it all but gave it a pretty good run. 25-29-25-25-19 (was supposed to do 36+ on the last one) with 90 secs in between. Later, I was slated to run 3 miles ended up per the garmin at 3.14 and took 26:50 (avg pace 8:33) Which is fast for me! I was huffing and puffing at the end.

Splits:
-mile 1 8:21
-mile 2 8:40
-mile 3 8:36
-last .14 8:40

30 mins is less time then I usually workout (i prefer to get in a full hour a day) so I decided I would add a weight session to days with runs under an hour. Besides, i haven’t done much weight lifting since committing to the 100 pushup challenge and i could really use it. I went with an on demand total body sculpt program. It was 20 mins long and used 10 lb weights. It was not very hard and didn’t do enough reps of the exercises to tire my muscles. Would not do this one again. To get the full our I also did a 10 sexy legs. This one was good for 10 mins and had some new leg moves I have never seen. Next time I need to kick up the weight session though- maybe go with the Jackie Werner on demand stuff as I originally planned. Off to volleyball later tonight. Last game of the season before playoffs.

While I was doing the weights in my living room I roasted some asparagus in the oven. Best way to cook it- about 30 mins at 350. The ends get a little burnt and crispy and somehow extremely delicious. Since I still haven’t gone to the grocery store I still have limited options. I paired the roasted asparagus with a hormel compleats roast beef and gravy (which is a top mashed potatoes).


The combination was very good. A little too salty and not the best mashed potatoes but what can you expect for something that heats up in 90 secs.


Now I am watching nova get killed by Notre Dame. Observations:
1. Where does Notre dame get so many good white athletes. We only ever have one token white kid that never plays.
2. Did the ND student section chant “shots, shots, shots…” during one of our free throw attempts? Because if they did, I can respect that.
3. Fish in a barrel, my friend. Nova’s the fish Notre dames court is the barrel. (towns the fish, people are the barrel….)


Coollld as iiice

You’re cold as ice to me! Singing that as I scraped the obnoxious ice off my car this morning. Really had to chip away at that. So annoying.

I made breakfast at home before coming to work.


-2 slices carb style bread
-1 tbsp reduced fat pb
-1 tbsp marshmallow fluff
-2 tbsp sugar free raspberry jelly


I love pb and fluff. This was delicious! I scaled down the servings of the pure sugar and pb to make this an about 250 calorie breakfast. The bread was high protein and fiber so that helped keep me full.

I snacked on an apple mid morning. And a coffee. Both ofnwuicho forgot to snap pics of apparently… sorry. just shows, been needing coffee thus far this week. I think I’m missing some sleep.

Lunch was Amy’s enchilada with Spanish ice and beans and some baked tostitos.

This amys isn’t my favorite. It needed salt but I am always hesitant to add salt to frozen meals. I would still buy again but I would start with the other varieties first.


Chips were good for sopping the beans.


And suicide hot sauce for my hotness.

As an aside if you haven’t noticed I’ve been eating a little more on Tuesdays. I don’t get home until 8 on tues and am always ravenous. So, I am trying to eat a little more during the day so I don’t binge when I get home and am rushing to make dinner. So far it is working out. I’m only adding an extra maybe 100 calories but I think it helps.

Fitness: W3 D2 of 100 pushup challenge. I manhandled this one. Well not really but it was manageable. Tough at the end when I had to do 25+, but i was able to do 33. I kind of just want this challenge to end! But I am sticking to it. Aside from that I did my normal Tuesday workout (see my workouts tab).

So I mentioned making Mac n cheese on Sunday and I was saving the recipe for when I served it. Today I realized I wasn’t serving it because it’s Jae’s turn to cook. So I had it for dinner.


-whole wheat Mac n cheese
-imitation crab (I ate it cold this time)
-broccoli, snap pea, and broccoli slaw
-extra hot cocktail sauce (!) and some light peppercorn ranch for dipping


Now for the Mac n cheeeeeeese (pronounced as in old school) recipe


-whole wheat pasta. I chose shells cause they reminded me of velvet shells n cheese.
-fat free cottage cheese
-nutritional yeast (just discovered this from the blog world. It is super good for you and has a cheesy nutty flavor)
-ff cheddar i used slices but shredded would have been perfect as well.
-whole wheat flour (for thickening)
-salt, pepper, cayenne, nutmeg for spice

1. Cook your pasta as normal
2. Put cottage cheese in a pot on the stove
3. When it becomes smooth stir in nutritional yeast (to taste. You actually can skip this step if nutritional yeast scares you but u wanted to try it and it seemed like it couldn’t hurt)
4. Stir in cheddar.
5. Add spices to taste
6. Stir in ww flour to thicken to your liking
7. Pour over cooked pasta

This Mac n cheese is guilt free and turned out to be a really good healthy version. Dan was skeptical and approved! If your skeptical about the cottage cheese, it actually becomes smooth and is the “cream” in your dish. And if you don’t care for the nutritional yeast omit it. I am not sure it added much flavor.

The leftover version was good too. The Mac stuck together a little more and was delicious and whole wheaty.

Next time I make this I will top with shredded ff cheese and bread crumbs and bake in the oven a bit.
