Southern Feast

I continued my productivity into the morning and i cleaned my shower before going to work. I like to clean my shower while I’m already getting in there to shower. Weird? Makes it easier I think.

My legs are super sore today from the running, weights, pilates and spinning this week. I am really hitting all my workouts this week. Recently I’ve had to modify my schedule and not do it all.

This morning I decided I needed the muscle healing protein of eggs. I had a smart ones egg mcmuffin knock off with a packet of ketchup on top. Slightly rubbery but good in a pinch.


Morning snack was a nectarine I bought yesterday at the produce stand. And a few cocoa roast almonds.


Lunch was a sesame chicken lean cuisine. Another favorite. The only problem with this one is that it seems very small. I have to cut up the chicken to drag out the eating process a bit.

I have been kind if hungry all day. For my snack I had my last white cheddar rice cake, some grapes (there weren’t many left) and some nuts.

Fitness: usual wed. Taught my kickboxing class with extremely sore legs (I think from my Jackie Warner workout on Monday).

Dinner was a new concoction Parmesan/old bay/corn flake Crusted Tilapia and inspired my southern feast.


I mixed together the parm, old bay seasoning, and crushed corn flakes and dipped the tilapia in skim milk and then into the mixture. I baked at 475 for 10 mins. For sides I did canned collard greens, super market mashed potatoes and crusty ciabatta bread (had half with spray butter).


This was delicious!! The fish turned out flakey and tasty. The only change I would have made is not used Parmesan because you couldn’t really taste it.


This was also the first time I ever had collard greens. I bought canned Glory brand that were preseasoned and they were so flavorful! They tasted slightly like hame, had a little spice, solo good. They paired great with my faux fried fish and mashed potatoes.


The potatoes I bought are the ones near the chicken in the supermarket. I am nt sure the brand but the country mash are delicious without a ton of added fat.

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.

The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

Yogurt Party!

I was selected to host an Athenos Greek yogurt “house party“. I apply for these all the time and this is the first one I was selected for! Yay! I ran to Walmart (only place near me they sell the Athenos yogurt) before work, aka really early so I could still arrive on time. They were in stock but only had honey and blueberry flavors. That was the start to my morning.

At work I made holiday oats that were a version of a blog I follow. Kath’s ComfOat and Joy. I stu,bled upon this recipe and as you can tell from recent binge eating of mints, I love mint! I used the mints you’ve seen and crushed then up.


-1/2 c rolled oats
-3 starlight mints crushed
-1 tbsp crushed pecans
-sprinkle of vanilla extract
-sweet n low
-pinch of salt
-water
-1/2 c silk nog

I then poured on silk nog but I poured a little too much without thinking. I like my oats to be a tad dry and these were swimming in nog. I do love nog though! They tasted awesome still, minty and delicious. 2 changes i would make 1 use the nog while cooking instead of poured on top and less of it. 2 pour the mints on at the end. Many of them melted into it which was good but I wanted crunchy prices of mint. Later these will be perfected!


I skipped morning snack since I overindulged with the nog. But when a coworker offered me a homemade green olive covered in a meatball and fried. I had to eat it. This was amazing Mmmm.


For lunch I put out the yogurt spread for the party complete with free yogurt and swag.


Instead of yogurt for lunch, I microwaved up a lean cuisine margherita pizza. I’ve enjoyed their pizzas in the past and this one did not disappoint. It was tomato, had some onion, cheesy and the crust was thin and crispy. I cut it into 4 slices to make it last longer and added some garlic salt and Goya. I love pizza, even if it’s a tiny lean cuisine serving.

For my afternoon snack, I finally tried the yogurt! I chose blueberry because it only had 100 calories vs the 160 for the honey (I actually don’t like honey anyway). It was good. Very creamy and the blueberry topping was a good compliment for it. If I feel like yogurt it isn’t my favorite but I might buy it again if it comes to my acme. It had 11 grams of protein which is awesome!

Fitness: I was going to take a spin class tonight but when I got into the room the sub was a teacher I despise. There are only a few teachers that I absolutely can’t sit for a minute in their class and I stumbled into this. I then family guy style slowly backed out of the room and then ran away. I switched it up on the fly and started by banging out my week 4day 1 pushups… Yup been on this set for like 2 weeks now, not even close to completing it. Afterward I did the fartlek workout I did on Tuesday. 3.5 miles in 32 mins. It was a ton harder today. I think it was a combo of new treadmill, hotter in the gym today, and end of the week so my legs must me a little more tired right? Not sure but strange how it can be so easy one time and hard the next. After the running I jumped on the step mill (the stair master that is the actual steps) for 30 mins. I plugged in the weight loss program and it had some heart rate raising intervals in there but wasn’t as hard as the preprogrammed speed intervals that I normally choose when I am on this machine. That was alright with me after the fartleks though.

I was nervous about dinner… I really couldn’t bring myself to eat that rice from last night but when I got home I realized I had just scooped then veggies on top, so I was able to separate the 2. I reheated a chicken from last night, lots of beans and veggies, and a tiny bit of rice to try.


I put no salt, hot sauce and garlic on the veggies and a tbsp of light ranch dressing for dipping the chicken.


This was much better then yesterday. That variety of veg called “soup vegetables” is really good. It has okra, green beans, carrots, onions, corn, potatoes and tossed with the garlic and hot sauce was really good. The addition of beans makes it hearty. The chicken wasn’t as crispy since it was reheated but is still so good.


I still don’t know how I feel about the rice. I can’t really get passed the weird smell, which is out of character for me (well the only other thing I can think of is tofu shirataki that smells weird but I like that). I don’t hate it… But I also won’t be buying it again. I transferred all the veggies into one Tupperware and saved some the rice so we can try again after a few days haha.

For dessert I had 3 starlight mints. Now I’m packing for my cousins wedding this weekend and watching Charlie Brown Christmas. I am actually not a huge fan of the CB movies but it’s the only Christmas thing on right now and I really wanted some Christmas. Definitely need to watch Christmas Vacation this weekend! I usually watch it a million times and I’m I haven’t seen any of it this year!

Burning off weekend feasting

First off, I bought this at Starbucks yesterday and I love it:

Other than that, seems like a boring day today, at least until my loong gym sess. And all my pics are from the iphone because i was charging my camera battery and left it at home.

Breakfast of oats. These smelled delicious but were a little boring compared to my oat experiments last week.

-half banana
-1/8 c steel cut
-1/4 c multi grain
-salt, cinnamon, sweet n low

Lunch was a chicken carbonara lean cuisine with crushed red pepper.

This is one of my favorite lean cuisines! Delicious cheesy, bacony sauce and lots of chicken. Spiced up with crushed red.. Looming in the background.

Afternoon baked apple snack. I got this apple in one of my lunch boxes last week. I don’t usually eat red delicious, I think they are grainy textured and not tart enough for me but thought maybe I would like it better “baked”. And by baked I obviously mean in the microwave. it was def better baked. I still need to get some cinnamon to keep at work!

Holiday vita top:

Fitness: went to MLS in Bryn Mawr to use more of my Philly dealyo classes. I got there early enough to run 5k on the treadmill…I was pretty slow and did it in about 27 mins. I don’t care for the treadmill but this was less painful then my last treadmill 5k. I finished by walking for .8 mile and made it a nice round 4 miles. After that went to boot camp. Another pretty good bc. This class was completely different from the last one, which i have mixed feelings about. I missed the kettlebells, she used two 5 lb weights instead and did a ton of reps. I thought 5lbs wouldn’t be enough but she really pumped out lots of reps. Again, there were some good cardio moves but they still used the step class moves more then I like. I hate step class! The ones she used today were easier and less dance-y, so i liked that. I got in an hour and a forty today which was needed after the binge this weekend. I have a feeling this may be a theme of the coming month. Now I am feeling really tuckered out so hopefully I will sleep really well tonight.

Snappy dinner since I was starving post gym and had a longer drive home since I went to MLS. I popped this Trader Joe’s spicy Kung pow chicken in the microwave. Drink was skim milk as always.


It had chicken, white rice, mushrooms, carrots, broccoli, and peanuts in a Kung pow sauce. It took about 5 minutes to heat up… It was recommended to heat for 8 mins and then let sit for 2 but I was way too hungry and impatient for that.


It was good. I especially liked the peanuts in it. The mushrooms were delicious too but there weren’t enough of them. The broccoli was plentiful which was nice, as was the chicken. It was not spicy…I had to kick it up myself with this:


I was still a little hungry afterward so I had a handful of raisins. About 50 calories worth.

Red beans and rice soup fail.

Looking at my google calendar at work this morning and feeling a tad stressed. I have a busy week ahead of me. Lots to do at work, holiday parties, fitting in workouts, other errands that are popping up, etc.

Trying to get everything i can done today!

For breakfast I got 2 scrambled eggs from the restaurant(?) in my work building. With a side of ww bagel thin toasted and sprayed liberally with butter spray.

And a diet snapple:

I was in a meeting and missed morning snack time. Lame. lunch I was too busy to actually take today… I ate a healthy choice red beans and rice soup at my desk. It was no bueno. I added suicide hot sauce but it needed salt which makes me cringe because I know how much sodium is already in canned soup. I would have liked it to be less brothy and more red bean and rice-ish but I guess that defeats the purpose of soup.

I was hungry again throughout the afternoon.

Banana.

Vita that I didn’t have time to get creative but kept with the holiday theme!

Fitness: I took an hour long spin class at the gym tonight. It was not my best workout. Not sure why, just one of those days when it was hard to push myself. Does anyone else have those days or weeks?

I ran some errands including buying my toys for tots gifts for work. Then came home and made dinner.

-Leftover whole wheat pasta and sauce sprinkled with crushed red and garlic
-purdue baked chicken cutlet (broiled in over for about 6 mins)
-broccoli tossed with salt and parmesan (steamed in microwave with a splash of water for 4 mins)

I love those pursue chicken cutlets they are convenient and taste bad for you.. In a good way because they aren’t. You can heat them straight up in the microwave for 1.5-2 mins but broiling them makes them crispier. Tastes like chicken fingers- you can imagine they’re fried. Delish. Broiled cutlet:

Now thinking about packing for NY since I am busy this week. Keyword thinking, way too hard to pack this far in advance. gonna read some more intuitive eating. Im only about 12 pages in but I think I am what they describe as a careful eater:

I somewhat agree so far but I am not sure I can change the way I’ve been eating for the past 7 plus years. And I think it is fine to have a knowledge of how many calories you consume. Especially in this day in age where there are so many scary stats at restaurants. One day you think you’re eating a turkey sandwich and being healthy only to return to your desk to look up the stats online.. And what you ate was upwards of 1000 calories. Then you cry. Yes, this actually happened to me….twice. Now I always look up what im ordering at bear rock cafe and panera. Everytime.

Fitness: woke up at 5:10 this morning and went to cycling class. The class was not the best workout but there were some challenging parts and I felt good from it.

When I got to work I was really craving eggs but decided to stick to the oats I brought from home. Maybe I’ll get some eggs tomorrow.

Another batch of holiday oats. Tried to make these blue but they looked green.


-1/4 c steel cut
-1/4 c multi grain
-1/2 banana
-sweet n low packet
-blue cake sugar crystal things
-1/2 tbsp of naturally nutty honey cinnamon peanut butter
-handful frozen pom

For lunch the office was having free pizza (post title a play on a dominoes commercial). Who isn’t excited by free food. I had a skier of veggie and a slice of mushroom-topped with goya hot sauce. I ate it with a knife and fork to eat slower. I wish there was salad.


I had a few mints I had thrown in my bag to get the pizza taste out of my mouth.

Then when work was done I made my way to the bus. Since I’ve never written about it, a couple things about my trips to NY. I go to NY to visit my friend, Dan sometimes referred to as Daniel (it’s the spanish, pronounced Danielle).

1. I have to race out of work to make the 5:30 train near my house. I like to walk to it (takes about 10 mins) but most times I have to drive right there. Annoying be ause when I return on Sunday I either have to get my car and fight for parking. Which is terrible near my house. Or I completely forget about it until I go to work Monday morning and make Lauren drive me there haha.
2. I catch the 6:30pm bolt or megabus depending on what’s cheaper when I buy my bundle (I buy as many tux as far in advance as I can because that’s the best way to get them for cheap). The bus has wifi and plugs and is a great deal. It can be as little as $6 round trip (my pr haha) or as much as $26 (still a good deal).
3. Depending on traffic and the bus being on time (it’s often late- especially mega), I get into NY around 8:30
4. Dan usually meets me at a bar near the stop and I drink a shock top draft (one of my absolute favorite beers) and go on from there.

And I was kidding Dan is my boyfriend. Anyone who knows me probably thought “typical” when I didn’t say it. Gotcha.

Anyway, today I got to walk to the train. Yay. En route I realized I had no cash. Sucks. Lucky for me Manayunk has a bar on vey corner so I was able to get cash. Yay. And run to the train to make it. Sucks. Got Dunkin donuts latte light (120 skim milk cals). Yay.


Was unprepared for the bitter cold and froze waiting outside for the bus. Sucks. Now I’m en route and blogging. Yay. The person next to me is going to think I’m weird when I take pics of the dinner I packed… I’m so cool.

Side of Herr’s whole grain pretzels. I love these. They have flax seed, omega 3s, more fiber and protein the normal pretzel sticks, and taste like delicious rye.


Wet ankles

Woke up this morning feeling well. I did pop another Sudafed for good measure tho. Also woke up to a miserable rainy day. But it said it was warm out and I thought maybe it was only sprinkling so didn’t wear me boots. Hence my wet ankles. I despise when the bottom of your pants get wet in the rain. It make my whole body feel cold.

For breakfast some more oats. This time I tried just the multi grain to see how it was. And I made them Festive Holiday Oats:


-1/4 c multi grain oat
-1 tbsp splenda brown sugar blend
-pinch salt
-1/2 banana
-sprinkle of green cupcake topping crystal things to make it festive
-handful frozen pomegranate seeds


Red and green! These were delicious. I def like these oats better then the regular rolled oats. Not as well as steel cut but steel cut you don’t get as big a serving for your calories. I also am loving these frozen pom seeds I bought. Frozen fruit on hot oats is amazing.

Snack was again the other half of the banana.


I also ate this ricotta that coworker Leslie was raving about and was a stickler with making Me take a pic ;)


For lunch I went to the work freezer and perused. I knew I was going to have a noodle dish tonight and I only had 2 non noodle lean cuisines. I whipped out this Amy’s cheese enchilada.


It had corn and black beans. And i spiced it up with some of my hottest hot sauce: crazy mother puckers liquid lava. Very spicy. I usae like 6 drops.


Unfortunately the work microwave (which has the power of the surface of the sun), booked it so all the cheese oozed out onto the rest of the stuff. It was still delicious. This had a little more calories then I would normally eat for a weekday lunch (about 370) but it was very satisfying and oozing with yummy cheese and enchilada sauce.


I also had this serving of salad with tomatoes and spring mix donated by coworker Brian.


I missed my apple snack because I was in a meeting but I dis still have my vita top hiding in a poinsettia in the office.


There you are! (yes I did sneak and take this pc in a high traffic area of my office. I’m that cool.)


Fitness: normal Wednesday routine. Taught kickboxing. There were lts of people in there today and it was a hard class.

Dinner I had big plans haha. I bought these tofu shirataki noodles a couple weeks ago(they are hard to find around here).


I decided to do an easier version of hungry girl’s tuna noodle casserole.


-1 bag tofu shirataki noodle
-1 can tuna
-1 can, or in my case box, of condensed cream of mushroom soup (I use tj portobello mushroom soup-delish!)
-4 tbsp parmesan cheese
-1/2 bag of green beans
-lots of crushed red pepper

I drained, rinsed, and patted dry the tofu shirataki. I microwaved the green beans for 3 mins in a bowl with a little water. I drained the tuna and added tuna, soup, and crushed red pepper to noodles and stirred it all up. 4 mins in the microwave. Half way stir and add Parmesan to top. Enjoy! The total calories is about 460. It’s a huge bowl! I only ate half.

This was the first time I’ve made anything like this. It’s actually only the second time I’ve eaten tofu shirataki. An I am not sure I’ve ever even had tuna noodle casserole.

My 2 cents on Tofu shirataki:
1. They smell weird out if the package
2. The consistency is a little strange. Chewier then regular spaghetti.
3. I love love love the amount you can eat for so few calories! A whole bag has 40 cals- amazing.
4. They have some fiber and protein as well. Bonus.

I enjoyed the dish it was a ton of food and I still get to have dessert!


Which was this sour box of Raisels! Sour in a good way. These are golden raisins covered in citric acid (the powder they put on sour patch kids- I would eat anything covered in that!). There are a few flavors. The lemon are a fav.


Lauren and I also put up our tree! Yay Christmas. Haha… Our tree is a little sad. Took us 5 mins to put up.
