Embrace spring

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.


-salad mix
-grilled chicken pieces
-apple chunks
-rf blue cheese
-pomegranate blueberry vinaigrette


The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…

Sunflower butter

Its weird waking up when it’s dark all of a sudden again. I know it’s only for a bit but I liked the sun in the morning.

My parents bought me a ton of fruit when they came last night so there will be a lot eaten in the next few days. Similar to this double serving at breakfast.

Strawberry Pecan Oats


-1/8 c steel cut
-1/2 multigrain
-1/2 banana
-splenda
-tbsp pecan pieces
-on top 5 strawberries cut up

This was a good mix of flavors. The pecans added a sweet crunch and went well with the strawberries. The banana males the oats creamy.


Missed my snack because I was in a meeting.

Lunch lean pocket pretzel bread chicken jalapeƱo cheddar.


This was just as delicious the 2nd time. Love.


With a side of 20 butter snap pretzels and the other half of my morning banana. All dipped in hot sauce. Yes, even the banana. It’s good. Try it.


Afternoon snack was some amazing pineapple and strawberries from my parents.

Fitness: I have volleyball today (so i cant teach my class) and a bachelorette party Saturday (difficult to fit in a long run) so I am mixing up my workout schedule this week. Today I ran my long run which was 5 miles. Mile Stats:
1- 9:27

4- 9:11
5- 8:59
Last .21- 9:39
Total: 5.21 48:12

Not great but not terrible. I am starting to see I will just be proud of myself for fishing the half instead of shooting for a time goal. It is my first one, I should try and enjoy it. Just a random thought.

After the run I had about a half hour to shower and get ready but i was oddly starving so i ate dinner instead.

I was still hungry after that so i thought i would try my newest purchase:


I made it into a fluffernuter.


-Slice of whole grain white bread
-tbsp sunflower butter
-tbsp fluff


Sunflower butter is delicious! The taste of sunflower seeds is subtle and it’s very creamy. I really like it as a pb stand in. I almost feel like I am cheating by eating it during Lent when I gave up pb… Almost.

More fitness: After, I walked with my friend Mike to the game. Some stats for that haha: 15 mins .76 miles. We won the game and walked back. So logged an extra mile and a half.


Birthday! …and lent

march 9 marks my 28th birthday. I am not a huge celebrator of birthdays (like people who have a bday month) but I like it to be acknowledged.. and I don’t mind gifts. haha

Today was also the first day of Lent. While I am not always the best Catholic, i do try to honor lent. Today I started 40 days of giving up peanut butter and peanut butter flavored things. I have been eating a ton of it lately so this is going to be a tough one.

For breakfast i really wanted those pb puffins but I promised to give them up, so i avoided.


-1/2 c grapenuts
-tbsp chopped pecans
-1/2 banana
-skim milk

I had the other half of the banana before going to lunch so I wouldnt be ravenous. Bad pic but trying to make it a little more interesting the just half of an overripe banana.


At work on your birthday, Lunch Club will take you out to wherever you want to go. Since I am having 2 meals out today (and this makes me slightly anxious) I wanted to go to a place where i can find out the calorie count and get something delicious, filling, and healthy. I chose Red Lobster. I don’t go there often but I love seafood and their website has an amazingly detailed nutritional information section. Dream! I planned out my meal before going and it was great.


-the highlight of trip: cheddar bay biscuit! soo melty and cheesy and fabulous.


-garden salad sans the croutons with balsamic vinagrette on the side (used the fork dip technique)


-blackened mahi-mahi with a double side of broccoli


They later brought me some ice cream with whipped cream and hot fudge.. i had a few bites of this as well. I couldn’t turn down free ice cream.


In the afternoon, I had the other half of my pint of strawberries.


Birthday vita top! In the flowers my department got me.


Fitness: i wasn’t going to not workout on my birthday!

Flashback to last year when I couldn’t work out because my eye was hit by a soccer ball and i was forced to do no physical activity for 2 weeks! I felt so guilty going out to eat. Tear.

Anyway, I taught my kickboxing class as usual.

For dinner I really wanted frozen yogurt. I love it and my life has been missing it since Saxby’s closed in Manayunk (psst, i hear a new place is opening in April!!). A quick googling earlier in the week led me to here: Sweetgreen. Not exactly close to my house, but not too far either. They seemed to have some healthy and delicious sounding salad options and more importantly tart forzen yogurt!.

I made my own salad with:


-mesclun mix
-spicy quinoa
-cucumbers
-peppers
-whole wheat croutons
-baked falafel
-curry pineapple yogurt dressing (fat free)


This was really good! The dressing really only tasted like curry, which was a good thing. The quinoa had a bit of a kick… Also good. I got the falafel which was tasty too. I would have preferred shrimp or chicken but they were out of shrimp and since it’s Ash Wednesday I stayed away from the meat.

It came with a side of wheat bread.


And as I said I really came for the tart yogurt. I splurged for the large with coconut, blueberries, and blackberries. This place was good, no pinkberry but, decent yogurt. They didn’t have that many topping choices. I think their schtick is locally grown stuff so the fruit selection was lacking.


I also had a stick of Kinder Bueno compliments of my friend Pam who just came back from Argentina and knows of my obsession with this hard to find in the US candy bar.


This was the perfect birthday dinner for me. I like to have a special treat on my birthday but if I go wild with fried food and a huge meal and tons of cake I will just feel guilty and gross. This was a good balance.

Tuna curry

Woke up this morning without the snooze button. First time in a while. I am still working through my food without going to the grocery store (special post about why tonight).

Breakfast was cereal mix. Last of fiber plus cinnamon oats and some grapenuts with skim milk. Love how grape nuts sink to the bottom. Mmmm


I was on a call during my morning snack time. I wanted my fruit but I could reach the work gifted ff snack pack and some mixed nuts. I need to buy more pudding, as i said yesterday, this is a tasty, chocolatey, salty snack.


Lunch was not frozen for once.


-TJ’s tuna green curry
-asparagus from last month
-last bits of my special k crackers


The tuna curry was so good. It had a little kick and the tuna was big chunks. However, this isn’t a dish to have often because it has 10 grams of fat (fine) but 9 of them are saturated. This is do to the coconut milk but still not a very good stat.


Afternoon snack… I finally got out the fruit. Cup full of very cherry berry blend from TJ’s.


Preworkout Fiber one.


Fitness: missed pilates today when I went to pick up my food (again explanation to come) bought taught my usual spin class. It was a good one. Lots of speed work with some hills thrown in which is pretty normal, but today I was out of breath often. Sign of a good workout.

My dinner is going to be on the next post because I have a special meal plan going on the next few days. To be continued…
