Sugar headache

Busy morning, well not busy but I woke up and put my laundry in the washer and then switched it to the dryer right before I left for work. Then when I come back it will be ready to put away/ pack for Christmas travels.

Breakfast was round two of Kath’s ComfOat and Joy. These were better then the first time.


-1/2 c rolled oats
-1 tbsp pecans
-3 starlight mints
-nutmeg
-1/4 c silk nog
-water


I heated up and then topped with the starlight mints and drip of silk nog. This was really minty and I liked waiting to add the mints at the end so you got prices of crunchy mint. I think I could actually do without the nog and just drink it on the side instead of mixed in.

I snacked on another one of my low fat whole wheat pb dark choc chip cookies. And a piece of Jodi’s Heath bar like bark. I will seen if I can get the recipe for this. Not healthy but sooooo delicious.


Lunch was Progresso high fiber minestrone soup. This was really good, i love the big pieces of potato and ww pasta.

At our gift exchange I got a Starbucks gift card! I was excited. And coworker Leslie liked my Slap Chop. I almost stole it back because I liked it so much haha.

Afternoon snack was Coworker Leslie’s pumpkin mousse. Lowfat! If demands me the recipe I will post that one too. With a side of cake ball.


In the afternoon I got a headache. I have my suspicions that it’s from all the sugar I’ve eaten today. I also got really tired. Sugar wore off I guess. Not cool.

Afternoon snack was an apple in the car on the way to the gym. I needed real food with nutrients. However this was post dentist appointment and killed my teeth. Waaa.


Fitness: usually Tuesday workout. 45 mins of pilates and taught my spin class.

Quick and salty dinner to make up for my sweet filled day.


I had hummus and buttery pretzels snaps whole my meal wads heating. This is the sabra Greek olive hummus. I am obsessed with sabra hummus. Once you have their brand you will never buy another brand. Every flavor is creamy and amazingly flavorful.


My TJ’s chicken vindaloo bowl took a while to heat up (about 7 mins) but was really good. Not very spicy-to my standards at least- but had a little and lots of flavor. Big pieces of chicken with lots of veggies. The rice was a little over cooked but still a good frozen dish.


I was still hungry so I had some more pretzels on the side.


No dessert tonight. I am sick of cookies… For now. Wish I could say I was sick of them for the season but let’s not get ahead of ourselves.

Saturday was Dan’s company Christmas party. We hung out at his house and watched tv in the morning.

Warning the food pics are few since i was trying not to be embarrassing to Dan in front of roommates or coworkers.

When i woke upI was starving and we split a pumpkin granola bar before we decided what we were going to eat. Not pictured but it’s the natures path one I’ve had in the past. I also had some of a Pb and jelly sandwich (natural, flax pb on white whole wheat bread and Crofters) that Dan made. I didn’t get to snap a photo tho. Oops.

For lunch we ordered from a Lebanese place near Dan’s house- forget the name. History: I have a strange relationship with falafel. I have never had falafel I liked. Every time I get it it’s so dry. I always think it sounds delicious and am disappointed. I decided to try it again… And this was the first falafel I have ever liked! In fact, I loved it! It was so good. Picture taken quickly under cover because Dan’s room ate was there.

Sooo good! On the side we split tabouleh and hummus. I really liked the tabouleh and the humus was very creamy but lacked something.. I think it was a little bland.

After lunch we hit the road. Dan’s party was in New Jersey or Yersey, might be a soft j. We arrived at the Hilton at about 3. (Fitness:) And checked in and went right down to the gym. I knew I would be eating a lot so I was determined to move a little bit. I did a half hour on the elliptical. I meant for this to be a leisurely work out, it was a little harder then anticipated but definitely felt better about my fried choice for lunch.

Then we showered and leisurely got ready for the party. It was a nice afternoon. I brought my camera but decided not to be the girl taking pictures of food. I apparently also decided to not be the girl taking pics at all. So we never even got pics together. Terrible pic… Here I am getting ready… Yes I decided to keep the big-ish dress I liked it too much to send it back. It was a good choice.


The night began with four loco. Yeah… It’s exactly as it sounds. I had a little of the grape. Dan had his own full can and some of another haha. Nice work. The grape was much better then the watermelon one I tried while we were in CA. It tasted exactly like grape soda which I don’t particularly like but it. Was better then tasting like.. Gross-ness

The food at the party was really good. Like I said I refrained from stalking the food.

They had cocktail hour and the best hor devour was a beef Wellington puffy thing. Nmh salty and buttery pastry. The dinner had some great mashed potatoes and tortellini among other things.

The most memorable was the dessert ice cream dish they were serving. Best vanilla ice cream I have ever tasted. Hands down. It tasted like icing. It was topped with pan fried mangos in brown sugar, butter, and tequila. Weird combination but it was soooooo good!!! I want to recreate it someday but I don’t think I will ever find ice cream that good again. Then and there, I decided I would rather have ice cream over any type of pastry or cake any day.

We drank a bunch during the night. After the bit of four loco, i had a raspberry stoli vodka and club and then decided to switch to beer. The beer selection was minimal so i went with corona and stuck it out for the long haul. Dan did many soco shots with coworkers and also decided sipping chivas on the rocks was a good move. You’ll see in the next post how that worked out for him haha.

Back tracking to Thursday… It was super busy. Another all day meeting.

Started the day with oats.

Cheesy pear oats

-1/2 c multi grain
-1/8 c steel cut
-1/4 c ricotta (end of the cheeeeeeese so I ate it in the container)
-pinch salt
-pumpkin pie spice
-sweet n low packet
-half pear
-water

Lunch was a horrible experience. I took one sandwich that ended up being covered in dressing.. Nightmare. I switched it out for this ham and cheese on rye with mustard.

Pear side:

I ended up removing some of the bread when I realize it might be honey mustard dressing on it. I also got rid of some of the cheese, you couldn’t taste it on the sandwich anyway.

Some chips… So hard to resist.

Banana for a snack before the holiday party.

At the holiday party I had 3 hor devours that I didn’t get pics of. I would have eaten more but I was busy being the company photographer. A bacon wrapped scallop… Awesome. A cheesesteak spring roll…awesome. salmon and cream cheese lollipop… Awful. Waaaay to much cream cheese… it was all you could taste.

The dinner food was excellent. It was the best of our company holiday party that I have attended. For dessert o had a small pumpkin bread thing.. I was not too happy about this, i am pumpkined put this season and an awesome peanut torte bite thing. It was creamy and had peanut pieces in a delicious crusty shell.

Throughout the night I had 2 glasses of merlot. Managed to sneak a pic of one:

At the after party at Iron Hill Brewery I had a raspberry wheat beer that was great. Need to go back there for a tasting.


NY Tourists

This is minimal words weekend.

Fitness: ran 3 miles. Walked about 5 more later… Tbd (to be discussed.

Split bottle of malbec. This was good but as Dan said, “I think I prefer beer with spicy Indian food”

The 5 more miles I spoke of were spent touristing NY. We went up 5th ave, past the tree, past a bunch of department store window displays, into St. Pats, into the met, through central park. It was chilly but fun. Parts had waaay to many people.

Now: fire, couch, literally chestnuts roasting on said fire, poker?

I had a pic but it is now lost. I’m sure you can imagine… Maybe.


Wet ankles

Woke up this morning feeling well. I did pop another Sudafed for good measure tho. Also woke up to a miserable rainy day. But it said it was warm out and I thought maybe it was only sprinkling so didn’t wear me boots. Hence my wet ankles. I despise when the bottom of your pants get wet in the rain. It make my whole body feel cold.

For breakfast some more oats. This time I tried just the multi grain to see how it was. And I made them Festive Holiday Oats:


-1/4 c multi grain oat
-1 tbsp splenda brown sugar blend
-pinch salt
-1/2 banana
-sprinkle of green cupcake topping crystal things to make it festive
-handful frozen pomegranate seeds


Red and green! These were delicious. I def like these oats better then the regular rolled oats. Not as well as steel cut but steel cut you don’t get as big a serving for your calories. I also am loving these frozen pom seeds I bought. Frozen fruit on hot oats is amazing.

Snack was again the other half of the banana.


I also ate this ricotta that coworker Leslie was raving about and was a stickler with making Me take a pic ;)


For lunch I went to the work freezer and perused. I knew I was going to have a noodle dish tonight and I only had 2 non noodle lean cuisines. I whipped out this Amy’s cheese enchilada.


It had corn and black beans. And i spiced it up with some of my hottest hot sauce: crazy mother puckers liquid lava. Very spicy. I usae like 6 drops.


Unfortunately the work microwave (which has the power of the surface of the sun), booked it so all the cheese oozed out onto the rest of the stuff. It was still delicious. This had a little more calories then I would normally eat for a weekday lunch (about 370) but it was very satisfying and oozing with yummy cheese and enchilada sauce.


I also had this serving of salad with tomatoes and spring mix donated by coworker Brian.


I missed my apple snack because I was in a meeting but I dis still have my vita top hiding in a poinsettia in the office.


There you are! (yes I did sneak and take this pc in a high traffic area of my office. I’m that cool.)


Fitness: normal Wednesday routine. Taught kickboxing. There were lts of people in there today and it was a hard class.

Dinner I had big plans haha. I bought these tofu shirataki noodles a couple weeks ago(they are hard to find around here).


I decided to do an easier version of hungry girl’s tuna noodle casserole.


-1 bag tofu shirataki noodle
-1 can tuna
-1 can, or in my case box, of condensed cream of mushroom soup (I use tj portobello mushroom soup-delish!)
-4 tbsp parmesan cheese
-1/2 bag of green beans
-lots of crushed red pepper

I drained, rinsed, and patted dry the tofu shirataki. I microwaved the green beans for 3 mins in a bowl with a little water. I drained the tuna and added tuna, soup, and crushed red pepper to noodles and stirred it all up. 4 mins in the microwave. Half way stir and add Parmesan to top. Enjoy! The total calories is about 460. It’s a huge bowl! I only ate half.

This was the first time I’ve made anything like this. It’s actually only the second time I’ve eaten tofu shirataki. An I am not sure I’ve ever even had tuna noodle casserole.

My 2 cents on Tofu shirataki:
1. They smell weird out if the package
2. The consistency is a little strange. Chewier then regular spaghetti.
3. I love love love the amount you can eat for so few calories! A whole bag has 40 cals- amazing.
4. They have some fiber and protein as well. Bonus.

I enjoyed the dish it was a ton of food and I still get to have dessert!


Which was this sour box of Raisels! Sour in a good way. These are golden raisins covered in citric acid (the powder they put on sour patch kids- I would eat anything covered in that!). There are a few flavors. The lemon are a fav.


Lauren and I also put up our tree! Yay Christmas. Haha… Our tree is a little sad. Took us 5 mins to put up.
