Southern Feast

I continued my productivity into the morning and i cleaned my shower before going to work. I like to clean my shower while I’m already getting in there to shower. Weird? Makes it easier I think.

My legs are super sore today from the running, weights, pilates and spinning this week. I am really hitting all my workouts this week. Recently I’ve had to modify my schedule and not do it all.

This morning I decided I needed the muscle healing protein of eggs. I had a smart ones egg mcmuffin knock off with a packet of ketchup on top. Slightly rubbery but good in a pinch.


Morning snack was a nectarine I bought yesterday at the produce stand. And a few cocoa roast almonds.


Lunch was a sesame chicken lean cuisine. Another favorite. The only problem with this one is that it seems very small. I have to cut up the chicken to drag out the eating process a bit.

I have been kind if hungry all day. For my snack I had my last white cheddar rice cake, some grapes (there weren’t many left) and some nuts.

Fitness: usual wed. Taught my kickboxing class with extremely sore legs (I think from my Jackie Warner workout on Monday).

Dinner was a new concoction Parmesan/old bay/corn flake Crusted Tilapia and inspired my southern feast.


I mixed together the parm, old bay seasoning, and crushed corn flakes and dipped the tilapia in skim milk and then into the mixture. I baked at 475 for 10 mins. For sides I did canned collard greens, super market mashed potatoes and crusty ciabatta bread (had half with spray butter).


This was delicious!! The fish turned out flakey and tasty. The only change I would have made is not used Parmesan because you couldn’t really taste it.


This was also the first time I ever had collard greens. I bought canned Glory brand that were preseasoned and they were so flavorful! They tasted slightly like hame, had a little spice, solo good. They paired great with my faux fried fish and mashed potatoes.


The potatoes I bought are the ones near the chicken in the supermarket. I am nt sure the brand but the country mash are delicious without a ton of added fat.

Sore back

Woke up this morning and my back up by my right shoulder was super tight and knotted up. I slapped on a to go heat pad to help it out and have been stretching all morning but it is so tangled up there. Waa next treatment will be Ben gay patch.

Breakfast was oats with a twist. I combined this weeks’ breakfasts an adde grapenuts.


-1/2 c oats
-1/4 c multi grain cereal
-1/8 c grapenuts
-1/2 banana
– mixed frozen berries
-pinch salt, packet snl

I liked the taste of the grapenuts in this but wish I had put them in after heating because they were no longer crunchy. Next time.

I also tried a few of a new find of Leslie’s vanilla and caramel almond mix. These were really tasty! Reminded me of Starbucks latte flavors.


Since I didn’t get to sleep until almost midnight last night I had the first of many caffeinated drinks this morning. Eggnogn’ tea.

Morning snack was going to be my banana leftovers per usual. But I caved and had this deliciousness! It’s a pretzel covered in caramel and chocolate! It was salty and chocolatey and worth the splurge. I would have loved to have 5 more of these. I wasn’t hungry or the banana half later so I wrapped it up and put it in the fridge for tomorrow.


Lunch was a healthy request chicken and whole wheat noodles soup and half an everything bagel thin.


This soup was really good. The while grain noodles really hold up in the soup and don’t get soggy. Lots if chicken as well.


On my break I went and got a pedicure to trim my large talons. They had my favorite hard candy of all time. I don’t even know what they are called but they are the strawberry things with delicious strawberry filling I always go straight to chewing them. Mmmm. While noshing on that my back really enjoyed the chair massage. Great time for this.

Afternoon snack was a cup of mango. You will be seeing much more of this in the summer months. I love mango.


And I had to try out my new nut mix so a few of those. Salty mmm.


Vita in front of the golden gate bridge! This is because I booked a vacation to San Francisco in a month. Super excited!


Fitness: because of my knotted back I am taking a break from pushups. I will do it once this week if the knot goes away but I think it’s best to leave it alone. After work I taught kickboxing per usual. Get warm and moving around actually made my back feel a lot looser. It feels slightly tight now but not nearly as terrible as the rest of the day.

Than I came home to make tacos for Jae and I. There were chicken and fish. I had fish with lots of veggies.


-Gortons grilled fish fillet (1 and a half filets)
-part skim mozz (they were out of ff)
-salsa
-siracha
-wrapped in a low carb tortilla (split into 2)


-refied beans on the side
-mixed stir fry veg prepacked at the grocery store on the side

I resisted having an after dinner palate cleansing dessert. I have been having those way too much and the bites add up.

I was going to put Ben gay patch on my sore back to sleep but I’m feeling alright now. Glad I worked that out! Does anyone have a way they deal with a knotted back? Looks like its heat and exercise for me. The rubbing at the nail place helped too.


Burn burn burn it up

After my weekend binge (sooo many cookies, 2 fast food stops, wedding hor devours, etc), I knew I had to get back on track this week. I felt like eggs so on my way into work I stopped at McDonalds (yeah, yeah fast food again but it was with good intentions) and got some scrambled eggs. That’s it, 170 calories of eggs. When I got to the office I opened them up and they had thrown a biscuit in there as well. It smelled so good. I looked up the nutritionals for it and opted out. I took the biscuit and immediately tossed it so I wouldn’t be tempted.

I toasted an Arnold multi grain sandwich thin and made a sandwich with the egg and Goya hot sauce. Delicious. I really need to just bring egg beaters and some Pam to work and make my own eggs in the microwave. Da well, this is delicious in the mean time.

I was freezing in my cube and drank the last of a berry tea bag I had during my normal morning snack time.

I ran an errand at lunch and picked up my gift for tomorrow’s Santa’s Sloppy Seconds we’re having at Lunch Club. Excited to see what everyone gets (it’s like white elephant I guess). While out I was able to pick up lots of seasonal teas! Peppermint, pumpkin spice, and more eggnoggn’. I returned to have a chicken noodle soup lunch.

With a side of ranch rice quakes. First time I’ve had the ranch. These were delicious, not too over powering…just right.

Afternoon snack I broke into the peppermint tea. Unfortunately the tea is caffeine free but it is very minty, which i like. And I had a banana.

More Vita holidays:

Fitness: i needed a looooong workout today after the weekend. So I decided to redo last Monday’s gym session. I started by doing pushups for the challenge (yes, still week 4 day 1:( ). I then ran for 30 mins on the treadmill, doing fartleks. These were tough, whenever I wanted to slow down I thought of cookies burning up (burn, burn, burn it up up upppp) haha. Stats:


After that i went to bootcamp class. The hour in there goes so fast! Today she used the bosu ball which was different and really exhausted my arms, abs and legs with different moves. She also used the kettlebell, which I have come to really enjoy. Another great hour and a half gym session and I still was home by 7:30.

I was starving when I got home. I made quick dinner of leftovers. Mixed veggies and white beans from last week, a little TJ wild rice, Morningstar chikn’ patty.

Condiments:

I love these veggies, lots of variety, excellent with hot sauce.

I also have had a love affair with chikn’ patties for a while. Mostly because they are so easy. Just heat in the microwave for 1-2 mins.

I decided I do not like this rice. I threw away most of the bag but kept trying it. It’s okay mixed with other stuff (you know, when the flavor is masked). Anyway I will definitely not be buying this variety again.

I really wanted to try my baking again so I had a cake ball and a cookie after dinner. Both were sooooo good today!! The cake ball was really moist and creamy. It tasted undercooked form the moisture of the jelly- in a good way. And I love the combo of chocolate, raspberry and white chocolate. These are awesome. The cookie is also delicious! They are very fluffy and cake-like and the pb and dark chocolate chips are so good in it. I am so proud of my guilt free desserts. Next time I will have to calculate the exact nutrtionals on these. There will be a next time.
