Embrace spring

April 11, 2011

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.

-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?

Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)

Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.

Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.

Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.

I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.

-salad mix
-grilled chicken pieces
-apple chunks
-rf blue cheese
-pomegranate blueberry vinaigrette

The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.

Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…

Pretzel Pocket

March 8, 2011

Today I was not liking the diet-to-go breakfast. A bran muffin and greek yogurt for 390 calories. First that is too much for breakfast. I stop at about 350 unless it’s something special. The muffin was tiny and 250 calories. I ditched the muffin and filled the yogurt with about a cup of Puffins pb cereal and a few strawberries.

This was a good combo but I wish it ha been plain yogurt. I do not like honey (not sure why just don’t enjoy that taste) and this was honey on the bottom. Anyway I slimmed this down to about a 300 calorie meal that was a lot bigger then the original.

For a snack at 11am I had a banana.

Lunch was back to diet-to-go (i have 3 more meals of this) Barbecue Chicken & Sauce with Anise Roasted Potatoes, Baked Beans, Green Beans & Almonds

i chose this one today because I know my dinner will be lacking veggies and this one had the most. It was only 380 calories. Good size for this tasty lunch. The chicken was good…

But I liked all the sides that came with this. Baked beans.

Green beans and almonds.

Potatoes. Surprisingly not a huge fan of these because they were made with anise. I don’t care for black licorice flavor. It was just a hint bit I could taste it. I doused it in BBQ sauce to salvage.

Afternoon snack was half a flat of strawberries. I got these 2 for $5 at acme.

And some mixed nuts.

Fiber one high fiber chewy bar before the gym.

Fitness: same old Tuesday routine. I missed pilates last week so glad to be back. At work I again struggled though W4D1 of 100 pushups. I’m stuck on this one doing a total of 109 pushups on about 10 mins.

I’ve decided that Tuesday dinners need to be fast. I don’t get home until after 8pm, I’m starving, and I only have an hour before I like to be blogging in my bed. Soooo that brings me to dinner. Ever since i heard of their existence (not sure how), I have been dying to try pretzel bread lean pockets. I found them at Costco and hopefully I like them because it’s a large box. Drum roll…

Grilled Chicken Jalapeño Cheddar Pretzel Bread Lean Pocket with sides of rf kettle chips and butter snaps dipped in my last tbsp of hummus.

The lean pocket was great. It smelled like a fresh pretzel baking… Amazing and I was surprised that the jalapeño cheddar actually had a little kick (I still added hot sauce.

I am glad I bought the big box of these, I will enjoy them.

Dessert was a godiva chocolate.

Now I am watching Nova embarrass themselves in the Big East Tournament. Which leads me to question who will I be supporting this march madness? Nova is going to go out mortifyingly early.. I think Notre Dame maybe my team after at. Gott keep it in the Big East. Nova, why?!

Busy busy

February 27, 2011

Woke up on Saturday to tackle my busy day in a hungover state. Nothing a little advil and a mimosa couldn’t cure though.

Our at home tailgate a la Higgins was delicious. He made whole wheat challah French toast with a warm berry compote and sausages.

The components:

This bread was awesome.

Berries were awesome too and perfect for me since I don’t really like maple syrup.

I had this cherry from the huge box I re-gifted to the boys house at new years.

At the game Dan and split these Chickie and Pete’s crab fries. $8.50 yeeeeeeah.

The game was a debauchery and I am not hopeful for Nova in the tournament this year :(. Dan and I had to duck out a little early to get up to NY for his sister’s engagement party.

I had tons of homemade deliciousness there but refrained from stalking the food.

Sunday was low key but Dan and I successfully saved money by making our own food vs ordering takeout.

Eggbeater sandwich with tomato, light Swiss cheese, and ketchup on a cheesy roll and a banana.

Chicken quesadilla made with rotisserie chicken, tomato, hot sauce, fat free mozzarella, and fat free sour cream on a smart and delicious tortilla toasted.

I snacked on s’mores goldfish, a granola bar, a few bites of a Wendy’s frosty, part of a chicken cutlet, I think that’s all… throughout the day. I also did some fitness! Unusual for a Sunday for me. I did a 30 min yoga program that was on demand. It had some great hip openers.

So tired now. G night.
