Embrace spring

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.

-grilled chicken pieces
-apple chunks
-rf blue cheese
-pomegranate blueberry vinaigrette


The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…


Dress dilemma and panera

I had a doctor appointment this morning and no time to eat, so breakfast was on the road. Peanut toffee buzz clif bar.

The flavor has real chunks of peanut which are a great surprise to stumble upon when you bite down. I don’t taste the toffee however I still think this is a good bar. It has 240 calories thus a good size for a meal bar, even better if paired with a piece of fruit.

They had a pretty tree in the dr office. I am really enjoying and basking in Christmas decor this year. Makes me happy through the cold weather.

For morning snack i packed an apple but I had over used the crest white strips again (got busy and forgot they were in grrr) and a biting into cold apple sounded horrible on my sensitive teeth. Inspired by baked apples, I used my handy apple slicer and slapped them in the microwave for about 1:30 mins. These turned out awesome. They were juicy and sweet and hot on a cold day. If I had cinnamon or nutmeg in my desk (maybe new staple next to hot sauce for the winter), it really would have taken the snack to the next level. Mmmm baked microwaved apples.

Lunch was at panera. Yes, I used to fear panera’s seemingly healthy turkey sandwiches that turned out to be about 1200 calories. But if you order carefully there, you can get a lot of food for low cals! Today I had the “you pick 2” (half sandwich with either half soup or half salad). I ordered the chicken noodle soup and the asiago roast beef without cheese or spread.


This soup is awesome! Big noodles and big chunks of chicken and only about 80 calories info was different at the store and on the site…interesting). The sandwich isn’t too bad even without modifying it, but I like to keep my lunches under 400 calories during the week. Even without the spread or the cheese, the bread is asiago cheese bread and very cheesy and chewy. Could be a little dry without the spread but that’s what extra soup broth is for. I loooove this combo!

Snacked on a pear in the afternoon. I brought my apple slicer to work and have used it multiple times today… If you hadn’t noticed. Used at first because my teeth bitting straight into an apple with their sensitivity just sounded awful and then because I could. Now I heart the cutter! Pears usually drip all over me and this one was so easy to eat! Thank you, apple cutter!

Fitness: i had a crazy running around evening. I decided to skip pilates and run home to snag my zappos dress order to see if it fit and/or needed alterations. I love the dress but unfortunately I have a body similar to a young boy (read no hips) and it looks a little wierd. I rushed to the tailor (I had about 10 mins before spin…yikes) and they said they couldn’t do anything to it! The pleats on the front (it’s the pleats! -anchorman) made it impossible to alter. This annoyed me and I was glad to be able to go teach spin right then to get out some annoyance. It was a good class. I was fueled by yesterday’s bleh :/ workout and the dress situation and really pushed it.

I came home and snagged a good parking spot and made dinner. This is a new concoction I tried because I was afraid my lunch meat might go bad and broccoli is my fresh veggie of this week. Some of aforementioned lunch meat was eaten in the process.

-ham lunch meat pan fried with pam
-broccoli microwaved 3 mins
-laughing cow light blue cheese wedge
-2 tbsp ff Greek yogurt
-1 tbsp Dijon mustard
-cayenne pepper

This turned out so well! The charred parts of the meat tasted sort of like bacon. They were deliciously salty and crunchy and paired nicely with the broccoli and cheese sauce. I used Greek yogurt instead of milk to try and make it creamier but unfortunately the laughing cow didn’t really melt very well and I was left with chunks of blue cheese. Not a complete let down, but I would have preferred a creamy saucy coating. Any thoughts on how to melt this?

Alright so going to try ordering the dress I mentioned on Sunday in a smaller size and see if that fits. If it doesn’t I will either stick with the first one and suck up the not fitted hips or just wear something I have. At least that’s part of the beauty of zappos- free overnight shipping and free return shipping.


Blue cheese and pickles… who am I?

I was rather hungry when I woke up this morning but did not know what I wanted and was very limited in my options. Much to my “d’light”…….. when I got to work I had Jimmy D’light breakfast sandwich in the freezer that i had forgotten:

The D’light is alright.. definitely not as good as a homemade breakfast sandwich…

-Dislike: the bread is a little chewy and sometimes a bit soggy. I am not a huge fan of american cheese but seems like it would b e dry without it

-Like: great to store in work freezer. The muffin has a nice wheaty flavor and goya kicks it up a notch

*Goya- a staple in my microwave diet to add flavor- my go to hot sauce when you want to use a lot of sauce because it isn’t that spicy.

For a snack I had some kashi good friends cereal… it was a pretty big serving for a little over 100 calories so I liked that i got to gnaw on it for a while
(the picture is actually a full cup serving i had scooped out for myself this morning thinking i would eat it for breakfast.. so i cut it in 2/3 for my snack)

Lunch was an easy Lean Cuisine:

The Tortilla Crusted Fish is one of 2 of the fish lean cuisines i eat (the others i find too fishy or weird tasting).

I mixed in my really spicy (can only use 5 drops) Hot Licks Suicide hot sauce. The fish is a little dry even when bites are taken with rice but it is still delicious. Next time I will bring in Goya as a back up to add some sauce to the fish part.

My afternoon snack was the same as yesterday… I really needed to buy fruit tonight!.. and I did. and my preworkout snack was a deliciously chewy Fiber One bar (that i took a picture of hanging on the fish/toy thingy in my cubicle- yay work).

After my usual Tuesday night routine of taking 45 mins of a pilates class and teaching my spin class I stopped at the grocery store for fruit. I was starting to get ravenous so this was a terrible idea– i wanted to buy everything in the store. I ended up getting fruit and some stuff for a REALLY quick dinner tonight and some 10 for 10 items that seemed like a good idea at the time.

So dinner was frantic because i was hungry at this point but since this my first week blogging I wanted to plate paper towel everything first before i ate it.

The meal started with this blue cheese.

I put a slice on one half of an everything bagel thin. The other side of “the thin” i covered in honey mustard. In the middle were pickle spears and ham. With a side of butter snaps.

The combo was actually really good. toasted everything bagel thins are awesomely everything bagel-y, I have recently come to like pickles (my most hated food until this year) and I never liked blue cheese but this only slightly tasted like it and it worked nicely with the ham and pickle spears.

On an awesome note I finally passed Week 3 Day 3 of the 100 pushup challenge. More to come on this but I had been stuck on this set for like 2 months! I almost gave up and then banged it out today. Has anyone ever tried this challenge and/or completed it?
