Really having a variety of breakfasts lately vs my normal routine of eating the same thing for weeks. Today I had Chobani Pomegranate Greek Yogurt and mixed with Kashi Good Friends cereal.


I love this yogurt! It is thick and creamy with tons of protein. It is basically plain tart Greek yogurt with the flavoring on the bottom you mix in. It’s delicious. Paired with some crunchy cereal I really enjoy it.

Morning snack was an apple and some mixed nuts.


Lunch was a tortilla crusted lean cuisine. I think it’s official that this is my favorite lean cuisine. The fish is so tasty and the rice has lots of corn and peppers and a delicious sour cream sauce. Perfect for hot sauce transport also. Out of the microwave:

I had a dr apt today and left work at 2:30. I had some grapes on the road.


Afterward it didn’t make much sense to return to the office for like 20 min so I ran some errands before my nightly gyming. I picked up some awesome cheap produce at this obscure stand on Ridge Ave which you will be seeing this week, got a pedicure for the wedding this weekend, went to the bank, and other odds and ends. Feeling productive.

I snacked on a fiber one bar and a small Dunkin donuts coffee with skim milk and sweet n low while running aforementioned errands.


Fitness: usual Tuesday routine of Pilates and teaching my spin class. I even had time to knock out my pushups which was not as difficult as i thought they would be since I lifted yesterday. I am still on w4d2 and in at 25-29-25-25-25. The last set should be 46 so I’ve got a ways to go.

Dinner was planned out to be quick (I’ve learned my lesson about starving on Tuesdays and needing food fast). I had spaghetti and meatball leftovers from Sunday.

It was actually better today because the sauce had a chance to thicken up. Muy delicioso.


Embrace spring

When I heard on the news this morning it was going to get up to 80 this weekend I knew flops and short sleeves were in my future. I can’t wait for warm weather! I am willing it with by open toes and no jacket today.

Breakfast was cereal.


-cup ff milk
-a little less then 1/2c grapenuts
-1/4c blueberry muesli
-5 cocoa almonds

I recently fed Dan grapenuts and he discovered even though he hated these as a child he enjoyed then now. If you haven’t tried them in adulthood… Do it!

Morning snack was a banana.. In hot sauce. “well, it needed it” -don’t tell mom the babysitter’s dead quote… No?


Lunch was eaten outside… of my office. It Lean cuisine chicken enchilada Suiza. As always the chicken in this is weird mush. I need to try smart ones brand I am told. (apparently I only tok a pic of the box. Oops)


Afternoon snack was baaaad. And by afternoon I mean right after lunch. It was baad but it was really delicious and left me feeling guilty! It was someones bday so they had brought the most delicious cupcakes! You know I love icing! This icing was amazing and tasted like vanilla ice-cream. Sooooo good! The cupcake was moist and amazing as well.


Why have I started my week with a cupcake binge?

Preworkout I tried to hold out since I had the cupcake but I ate a handful of nuts so I wouldn’t die on my run.


Fitness: today I was slated for 4.5 miles. From this week on out my mileage starts to get big. Makes me nervous with the running and my classes how my legs will feel by the time saturday rolls around and I have to do my long runs. After the run I was excited to try out my new DVD.


I tried some of Jackie Warner’s weight training on demand but they are no longer on there so I ordered this one that has 5 workouts to do on days when my run isn’t so long. Besides I have been doing the pushups for so long now I miss weights in my life. I did the 50 min total body circuit and I really liked it. It wasn’t hard enough to do on it’s own but coupled with a run I felt good about it. The ab and arms sections were the hardest parts.

After a hot run, hot dinner did not sound appealing so I made a salad. Modeled after the sour apple salad I had at Couch Tomato recently that I enjoyed.

The salad was delicious! Apple and blue cheese go really well together! This dressing was one I saw and snatched up a while ago and never opened. It only has 25 calories per 2 tbsp. It was a little vinegary but very light and refreshing.

On the side I had some everything bagel pretzels.


Determined to have a productive night tonight. I need to start packing for my trip to Boston this weekend. (My good friends are getting married and it should be really fun.) But before then I have a busy week of sports and working out.

I wish the warm weather would stick around…

Breakfast I haven’t had on a while… 1/2c grape nuts cereal and half banana with skim milk.


I love how these sink to the bottom of the bowl and are so crunchy. Combined with the soft banana delicious.


Morning snack was the other half of my banana and a peach. Mixing up the fruit!


For lunch I tried a new Tasty Bite I have never had before. Malaysian Lodeh.


It had tofu (really deliciously spiced) and veggies. I think the veggies were carrots, baby corn, and okra or green beans, not really sure. It was soooo good!


I dipped half of my everything bagel thin in it to sop up the awesome curry-like sauce.


Afternoon snack was an apple and a green tea while watching a webinar.


I forgot to pack my vita top of the day and had no backups in ny work stash so i spread a tbsp of naturally nutty choc cherry pb on the other half of my bagel thin (hence why I saved it).


Fitness: usual wed routine (as always see my workouts tab). I was really tired going into the class and had a very hard time pushing myself today. Twas rough.

Dinner was thanks to a sale at acme. Asparagus was super cheap and is something I don’t make often. While I was preparing the meal I snacked on some special k crackers and hummus.


-roasted asparagus and portabella mushrooms
-mango chicken sausage from TJs
-sans spicy mustard for dipping
-small serving of leftover mac n cheese


All I did was spray these with cooking spray and slap the asparagus and mushrooms in the oven for about 15 mins on broil. When they were done i topped with some salt and rf Parmesan. This was such an easy way to make asparagus! I especially liked the crispy ends.


The sausage I just sizzled up in a pan on the stove to get some crispiness outside.I microwaved for a bit to make sure it was hot. This sausage was really good. There were actually chunks of mango in it which was a pleasant sweet surprise.


For dessert, I have been craving dark choc. I had a square of lindt dark with a touch of sea salt. Soooo good!

Still feeling the affects of drinking a lot on Saturday. :(

Breakfast needed to be bland haha. 1 c of fiber plus antioxidants cinnamon oats and ff milk.


Morning snack was an apple.


For lunch I had vegetable barley soup. It was awesome! It was tomato based but very thick. The barley was a little mushy but it delicious and filling.


I had 12 special k crackers on the side.


Afternoon snack I needed some filling fat so I reached for some soy nuts.


And then a cookie that was calling my name all day from the kitchen. It was small but I blame the queasiness today.


My vita top was hanging from a noose today. Because that’s how I felt at my desk. You’re welcome.


Fitness: since I wasn’t feeling so hot all day I wasn’t sure an all out cardio sess was really going to help. I have a group on for 5 hot yoga classes that expires in March and I’ve only used one so decided that might be a nice low key thing to do. With the added bonus of sweating out the remainder of the booze haha. It was a good class. Not hard and hour and a half is a little too long to hold my attention the whole time, but I enjoyed sweating and stretching… and my stomach thanked me.

When I got home all I wanted was veg. I microwave the remainder (about half bag) of my broccoli slaw and topped with marinara sauce.


On the side I had a full whole wheat naan heated in the microwave and topped with spray butter, garlic, and rf Parmesan. This hit the spot.


Handful of raisels to get the garlic taste out of my mouth.


Now I have vowed to go to bed super early so I’m putting the iPad down. Tomorrow I should feel normal again.


Dan’s Birth

…day! Happy birthday, little guy.

My camera battery was still dead today so excuse the iPhone photos.

For breakfast I went back to pb, jelly, and fluff. Sooooo delicious.


Morning snack was an apple.


Lunch out courtesy of a work vendor. We went downstairs to our local cafe. They didn’t have the hummus for my usual veggie wrap, so I improvised. This is their fajita wrap without the cheese and sour cream. I ate the first half (this is the leftovers. You get the picture).


It had grilled chicken, peppers, and onions in a panini pressed wrap. I spooned on salsa and hot sauce. I had a tiny 70 calorie bag of chips on the side (not pictured).


In the afternoon, I snacked on a slice of sprouted wheat cinnamon raisin bread topped with spray butter.


The vendor came bearing gifts! This was my favorite one… A Starbucks-like tumbler. I posed my vita top with it. I was embarrassingly excited about this haha.


Fitness: I had a pretty nice (treadmill) run today. 3.5 miles in 30 mins. Then I walked/ jogged to make it 4 miles in 37 mins. After the run I took a yoga class. The class was actually pretty hard. She did a lot of balancing poses in a row which had my legs tiring and cramping up. It also felt good to stretch out after the run. Run then yoga combo is a love of mine.

By the time I got home, I was REALLY hungry so I was glad to have leftovers of Jae’s jumbalaya from yesterday. I think I forgot to mention their were white beans in this also. Tonight leftovers had no sausage and only shrimp (must have scooped poorly yesterday). It was again really good though!


I also had a slice of the ciabatta from last night toasted with spray butter.

And a side of olive bar mix. A few cubes of cheese, mushroom, red pepper, and o’ course olives.


Now my legs are feeling like jelly and it’s time for bed. I haven’t gotten to wish Dan a happy birthday because his phone is dead! Waiting to do that and going to bed.

Hot jumbalaya!

Uneventful day until dinner.

Breakfast was a toasted apple cinnamon fiber one muffin with spray butter and an apple.


Morning snack was half a pint of Blueberries. This batch was better then the other. More tart berries. And a few cocoa roast almonds.


Lunch was a safe way brand chicken and wild rice soup. I think I have officially decided i don’t love wild rice. The aftertaste is weird. This soup was good though. Lots of carrots but not enough chicken.


I had some special k garIic herb crackers on the side. These were delicious and only 90 calories for 24 chips. They donthave much fiber or protein but I bought for the volume.


Afternoon snack was the other half of the blueberry pint.


Later I was still hungry and had a handful of soy nuts.

Fitness: normal wed routine (see my workouts tab). Today I added a bunch of moves I learned from 6 week 6 pack. For some reason when was the leader of these they didn’t seem as hard as when Jillian Michaels leads but still nice to mix up the class a bit.

Dinner was a lovely meal and nova bball. Watch at Jae’s. he made a jumbalaya type dish. It was awesome!


Hoot jumbalaya:
-Spanish rice with peppers and onions
-shrimp coated in Moroccan spice
-mango and jalapeƱo turkey sausage

sides:
-stuffed mushroom with tomato and mozz
-garlic bread

The jumbalaya was a good amount of spiciness.


The stuff mushroom was a delicious addition as well.


I went back for more garlic bread because it had a crispy crust and a soft middle. Sooo good.

Then nova beat Marquette. Nice little dinner.

You’re cold as ice to me! Singing that as I scraped the obnoxious ice off my car this morning. Really had to chip away at that. So annoying.

I made breakfast at home before coming to work.


-2 slices carb style bread
-1 tbsp reduced fat pb
-1 tbsp marshmallow fluff
-2 tbsp sugar free raspberry jelly


I love pb and fluff. This was delicious! I scaled down the servings of the pure sugar and pb to make this an about 250 calorie breakfast. The bread was high protein and fiber so that helped keep me full.

I snacked on an apple mid morning. And a coffee. Both ofnwuicho forgot to snap pics of apparently… sorry. just shows, been needing coffee thus far this week. I think I’m missing some sleep.

Lunch was Amy’s enchilada with Spanish ice and beans and some baked tostitos.

This amys isn’t my favorite. It needed salt but I am always hesitant to add salt to frozen meals. I would still buy again but I would start with the other varieties first.


Chips were good for sopping the beans.


And suicide hot sauce for my hotness.

As an aside if you haven’t noticed I’ve been eating a little more on Tuesdays. I don’t get home until 8 on tues and am always ravenous. So, I am trying to eat a little more during the day so I don’t binge when I get home and am rushing to make dinner. So far it is working out. I’m only adding an extra maybe 100 calories but I think it helps.

Fitness: W3 D2 of 100 pushup challenge. I manhandled this one. Well not really but it was manageable. Tough at the end when I had to do 25+, but i was able to do 33. I kind of just want this challenge to end! But I am sticking to it. Aside from that I did my normal Tuesday workout (see my workouts tab).

So I mentioned making Mac n cheese on Sunday and I was saving the recipe for when I served it. Today I realized I wasn’t serving it because it’s Jae’s turn to cook. So I had it for dinner.


-whole wheat Mac n cheese
-imitation crab (I ate it cold this time)
-broccoli, snap pea, and broccoli slaw
-extra hot cocktail sauce (!) and some light peppercorn ranch for dipping


Now for the Mac n cheeeeeeese (pronounced as in old school) recipe


-whole wheat pasta. I chose shells cause they reminded me of velvet shells n cheese.
-fat free cottage cheese
-nutritional yeast (just discovered this from the blog world. It is super good for you and has a cheesy nutty flavor)
-ff cheddar i used slices but shredded would have been perfect as well.
-whole wheat flour (for thickening)
-salt, pepper, cayenne, nutmeg for spice

1. Cook your pasta as normal
2. Put cottage cheese in a pot on the stove
3. When it becomes smooth stir in nutritional yeast (to taste. You actually can skip this step if nutritional yeast scares you but u wanted to try it and it seemed like it couldn’t hurt)
4. Stir in cheddar.
5. Add spices to taste
6. Stir in ww flour to thicken to your liking
7. Pour over cooked pasta

This Mac n cheese is guilt free and turned out to be a really good healthy version. Dan was skeptical and approved! If your skeptical about the cottage cheese, it actually becomes smooth and is the “cream” in your dish. And if you don’t care for the nutritional yeast omit it. I am not sure it added much flavor.

The leftover version was good too. The Mac stuck together a little more and was delicious and whole wheaty.

Next time I make this I will top with shredded ff cheese and bread crumbs and bake in the oven a bit.
